I know you said just one. but for me I have two that I would really like to see changed:
1. Make the concierge deposit refundable within at least three days of booking. I think that's fair and so many times I've seen a room I'd like to book but DH is traveling, and I can't confirm with him whether booking is ok per his schedule. while trying to confirm with my husband, I lose the room I want to book. sometimes the 24-hold period isn't quite enough time.
2. the Monday-Friday 4-night cruises on the Wish. Just yuk. why on earth would I want to pull my kids out of school for five full days for a Mon-Fri cruise? At least make SOME of 4 night cruises leave in the middle of the week so you aren't losing an entire work or school week.
