If they offer you an upgrade to concierge at arrival, you would have to determine if the food offerings would offset the cost.
If you don't usually eat a big breakfast, then the offerings should be enough (cereal, danish, bagels, coffee, juice).
When you book concierge in advance, you have a planning staff that can help you with your planning (PS, special gifts, inside tips on what not to miss, or what special events will be going on). The pre-planning staff is very good at getting those "hard to get" PS, like CRT on the day and at the time you want. No more early morning phone calls or large phone bills trying to arrange that.
If you spend a lot of time at the parks, you will miss some of the food offerings. If on the other hand, you spend a lot of time at the resort, then you can take advantage of more of the offerings.
The cocktail hour offerings (4:30 or 5 till 7 or so) are usually meant to be a drink (wine / beer) with an appetizer. Some people (lounge hogs) try to grab a huge plate and make it dinner. With 3 younger kids, we usually have early dinner PS, so we skip these.
We really enjoy getting a late after dinner drink and sitting on our balcony (while the kids fall asleep) or in the lounge, talking about our day or what we should do tomorrow. Again not enough to justify the cost for concierge (bring your own bottle instead).
