What did you bake today ? OK if not from scratch

Went to the orchard yesterday and have a huge pot of applesauce cooling on the stove top, apple crisp is ready for the oven and spaghetti casserole ready to go for company tonight.
 
Yesterday I made homemade cream of crab soup, cheddar bay biscuits, and pumpkin snickerdoodles. Today I think I'm going to use the rest of the pumpkin to make a pumpkin cheesecake. :)

The soup was probably one of the best things I have ever made. It was so good!
 

I made one of my "secret recipe" banana cream pies to deliver as part of a meal for a family who have just suffered a loss. :grouphug: Most people love it and I hope they do too. I never eat it myself; I don't care for banana cream.
 
Made a few loaves of Pumpkin Bread. The house smelled amazing. Here's the recipe I used:

1 15 oz. can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all- purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 tsp ground ginger

Preheat oven to 350 degrees F (175C). Grease and flour 3 7X3 inch loaf pans.

In a large bowl, mix together pumpkin, eggs, oil, water and sugar until well blended. In a separate bowl whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared loaf pans.

Bake for about 50 minutes. Loaves are done when toothpick inserted into center comes out clean.

Don't you love recipes that use the whole can of pumpkin instead of leaving you with some leftover amount you have to keep until "the next time"? :)

Super easy and the house smells great! Doubled the recipe so we have an extra loaf to share.

ETA: DH gives the cinnamon swirl loaf two thumbs way up!

I woke up in a baking mood this morning. I made a keto chocolate cake with chocolate icing. Next up is keto pumpkin bread with cream cheese icing. :)
 
The new episodes of the British Baking Show come out on Friday, so I've been baking something "British" that I've never made before to eat while we watch. Last week Pavlova. This week Madeira Cake. This is what passes for pandemic high entertainment in our house these days. :bored:
 
I got bored and wanted to bake something different.... I bake a lot...found a recipe for a cranberry curd almond cake....oh yum! It was a more complicated recipe,which was great. and it tasted great
 
I made “Less Fuss Pancakes” this morning.

You just use your normal mix or recipe with one or two (depending on batch size) additional eggs, throw in whatever extra goodies you want, and bake in a muffin tin at 350 degrees.

This morning I added chopped pecans, precooked cut up bacon, and dried cherries, and they took 16 minutes. (I also lined the muffin pan with parchment paper baking cups.)
 
Baked 20 dozen cookies for my church's annual cookie walk. It will be drive up, pre-bagged this year rather than a true walk. Made 10 dozen chocolate krinkles and 10 dozen cut-out sugar cookies.
 
I just did up a new recipe for an apple spice cake and popped it in the oven. As of Friday we're under a whole bunch of new Covid restrictions here so there's zero chance of being able to share it with anyone. That means that with my weird family who doesn't care for desserts or baked treats that either a) I will eat most of it myself; or b) a big part of it will go to waste. Either way, I was feeling reckless and it already smells heavenly! :cloud9:
 
I baked a lot this week....tonight I made homemade apple turnovers and they came out really good!! First time ever trying those.

Also made rice krispie treats, raspberry bars, an apple cake, pecan pie, a quiche and I made and baked a pie crust. Now, you may not think that is an accomplishment but to me it was everything. I am a pretty good baker but I have yet to perfect a homemade pie crust. It is my mission to get it right. I tried a few different recipes and my moms tried and true is a keeper (made with oil) but I also liked the ATK butter crust recipe.
