I'm tired of the same old mashed potatoes, mac 'n cheese, fries, tater tots and pierogies. Give me some of your best quick and easy side dishes.

It's dough filled with potatoes. Usually the potatoes are mixed with cheese or sauerkraut. I prefer the potato and cheese filled pierogies.

Oh, we love tomatoes with fresh parsely and a little blasamic drizzled over it. Quick and great!

Lemon Garlic Pasta Toss

3 cloves garlic, finely chopped ( I use fron the jar & WAY more than this)
1/4 cup olive or vegetable oil, 3 TBSP lemon juice from concentrate (Realemon Brand), 3 tsp chicken flavor instant bouillon, 1/8 tsp pepper, 1/2 lb.spaghetti cooked & drained, 1/4 cup grated parmesan cheese1/4 cup fresh chopped parsley

In a small skillet, cook garlic in oil until golden. Add lemon juice, bouillon, and pepper; cook and stir until bouillon dissolves. In a large bowl, toss hot pasta with garlic mixture, cheese and parsley; serve immediately.

This is so good most time I just cook it up to have for dinner. My kids like this too.

I made a cream sauce that we put over steamed asparagus the other night. DH LOVED it. I just made a roux (equal parts melted butter and flour). Cooked it for a minute then added in cream until it was at the consistancy I wanted. Salt (I should have added a little more than I did) and freshly ground pepper. YUM!!

We do a lot of frozen veggies in the steamer in the microwave.

Mmm, that sounds really good!

Cantw8, that side dish is all yours, honey. I'd need a razor to trim the hair off first. :rotfl2:

Can you do this with brocolli?
 
This one is super easy, quick, and is YUMMY! I often make it for potlucks and there's never leftovers!

Cornbread Casserole

(this is a large batch, you can divide all ingredients in half for a smaller batch)

2 sticks of butter
4 eggs
2 - 16 oz. cans creamed corn
1 - 16 oz. cans whole kernel corn, drained
2 c. sour cream
2 boxes Jiffy cornbread mix

Melt butter, beat eggs. Mix all ingredients together. Pour in greased 9x13 pan. Bake at 375 degrees for 35 minutes (until golden brown on top).
 
My favourite is chilli roasted brocolli. You cut up the brocolli and toss it with olive oil, garlic, chilli powder, and grill spice. Then you put it in a 425 degree over for 15-17 minutes. It's so yummy!
 
When I need something quick and easy I throw together a salad. I buy the salad in a bag, throw in some tomatoes and cucumber and I'm done :woohoo:

Oh, those are another regular side dish that I make and I'm tired of. I guess I should've rephrased what I said. I love mashed potatoes and could eat them every day in some way or another, but my kids are tired of them.
