What’s for Dinner Tonight?


Next time I go to NYC I’m asking you for restaurant recommendations
Ask away! NYCers are an opinionated lot and don’t get any off us started on who makes the best pizza 🤣😉.

Continuing the leftover story, I needed to use up almost a dozen cracked and mostly unseparated eggs from a lesson on how to make crème caramel/flan. D, my home attendant got tired of watching me torture the eggs and jumped in to “help”. Long story, short : I made a crustless veggie and cheese quiche for the freezer which helped me to get ride of a lot of odds and ends. And D. better understands why separating yolks from white can be necessary, lol.

Finished off the black bean soup leftovers as I only used 2 cans instead of 4. Added chopped ham and shredded carrots doused in sherry vinegar to the top. That’s an inspired addition I’ll do again.
 
DH and I had supper on Monday night at The Polite Pig. I had the smoked turkey BLT, he had the brisket sandwich, and we shared. The brisket was good, the smoked turkey was ahMAYzing! We also shared a pitcher of apple pie old fashioneds (whiskey sours?) which explains the slow morning here at Saratoga Springs.

This afternoon we are off to the golf club at the Villages (Havana Country Club?) to have lunch with some old friends. The husband was DH's PhD advisor and his wife was a grad student who was a couple years ahead of DH in the program. We hadn't seen them in decades but had lunch together when we were here last January- had a great time- so that's what we are doing today, too!

I dropped the ball during Christmas break and forgot to skip different meal kits we had rotated through so we ended up with six different meal kits last week (from three different companies). They're all on pause now, but we finally worked through the last of those meal kits on Sunday. The bright side is that we didn't really have to go to the grocery store for a week and a half or so. And all four of us took turns in making dinner (even my younger son with his one good arm as he's recovering from shoulder surgery :rotfl2:)

In order of general consensus voting (from most preferred to least), the meals were:

  1. Shrimp Fra Diavolo
  2. Sesame Soy Beef Bowls
  3. Crispy Chicken with Dijon Brussel Sprouts
  4. Sweet Ginger Pork Chops with Rice
  5. Oven Baked Salmon with Broccoli
  6. Pesto-Ricotta Meatball Flatbread
