Whole roasted chicken with salad and green beans
Quoting myself to add that we ended up having a half of a loaded baked potato each. The potato leftovers will be lunch tomorrow. Our plan is loaded baked potatoes & lobster bisque soup from Panera Bread, but we ate a very late lunch. We'll see what we end up having.
It sounds similar to what my mom called goulash. She added American or cheddar cheese. I add sharp cheddar, when I make it. We like to crumble up cornbread in it. The ultimate comfort food meal.American chop suey tonight.
I was looking for a recipe to add “something “ to how I usually make it. But when I looked it up everything was like chinese chop suey. Ugh!!
So I’m not sure why it’s called chop suey but that’s what my mom always called it. All it is is ground beef with elbow macaroni and sauce kinda like meat sauce with the pasta mixed in.
Does anyone else call it that?
Well anyway I was just gonna add mozzarella, but I added some onion and ricotta cheese along with the garlic I usually put in.

Yup, American chop suey. My mom made it with hamburger, elbow noodles, and a can of diced tomatoes. When I get "fancy" I saute diced onion, peppers, and garlic to go in the burger. Maybe the name is a regional thing? I grew up in the Boston area.American chop suey tonight.
