What’s for Dinner Tonight?

Windows and mirrors washed today. A ton of paper shredded and I’m working my way out the door again. This time it’s WDW with a friend of at least 40 years. Should be fun hooting and hollering on the rides and not pretending I’m a grownup, lol.

Tonight’s meal will be red lentil cacciatore courtesy of the freezer. Maybe I’ll have a dish of vanilla ice cream with Italian cherry syrup atop just to lower the freezer level. Obviously the only reason 😉.
 
We are gearing up for another round of house stuff. Luckily this is a much smaller project than the last. Our contractor will be here tomorrow. I’ll be spending tonight moving the last few things. On the plus side our new dining room will be ready for the holidays! Having an open house on December 13 so we are pushing hard to get everything done.

Tonight I’m making tacos; ground beef for DH and black bean for me with Spanish rice.
 

Tried my hardest to alter a pair of shorts but it was just too much so I took them to the local tailor who scolded me for starting the work My way of doing it was indeed more complicated but looked more professional, IMO. He decided to follow my lead since I’d already begun which was a great way to keep a persnickety customer and “retain face”.

Went to the last local farmers’ market and got what was needed to make appetizers for vacation. It’ll be open next Tuesday but I won’t be here. Got red peppers, golden beets and chestnut mushrooms. Not sure what I’m doing with the beets yet but they just looked lovely. The peppers will become muhammara, a pepper and walnut dip and the shrooms will be marinated, Italian style.

Tonight’s dinner was chicken tortilla soup and for dessert it’s a tasting of the various concoctions I put together for champagne cocktail to go.
 
American chop suey tonight.
I was looking for a recipe to add “something “ to how I usually make it. But when I looked it up everything was like chinese chop suey. Ugh!!
So I’m not sure why it’s called chop suey but that’s what my mom always called it. All it is is ground beef with elbow macaroni and sauce kinda like meat sauce with the pasta mixed in.
Does anyone else call it that?
Well anyway I was just gonna add mozzarella, but I added some onion and ricotta cheese along with the garlic I usually put in.

It sounds similar to what my mom called goulash. She added American or cheddar cheese. I add sharp cheddar, when I make it. We like to crumble up cornbread in it. The ultimate comfort food meal.
