What’s for Dinner Tonight?


Hey guys-I finally made the Healthy Turkey Meatloaf. It's been too hot to cook, but I made it earlier today. I actually made two. The recipe called for 1/2 lb. of ground turkey but I could only find 1 lb. packages, so I doubled the rest of the recipe. I also omitted the lemon pepper because I only had Italian style bread crumbs.

I just realized they look like a couple of cow pies, but it tasted pretty good.

Went looking for 3 lb containers of ground turkey and could only find 1 and 2.
Wondering if the powers that be think we won’t figure out that it cost a lot more for a pound now. During the pandemic I could buy 3 lbs for about 10 bucks but now it’s 2 lbs for $10 and they call it a sale… pfft.

Taken all the zucchini out of the fridge, washed them and they are sitting on the table waiting for my home attendant to discover it’s gonna be one of those days. Poor dear.

Homemade hamburger helper tonight,

Busy day after having the family over....cleaning, laundry, down with birthday decorations and up with July 4th ones. Also moving some furniture around and out of the way prepping for new family room set to arrive Wednesday

Glad I get to stay home today....just checked weather. 80 degrees out at 5 am and supposed to get to 116 today :(

I add a can of red enchilada sauce to it and generally use meat pulled from a rotisserie chicken when I’m looking for shortcuts.

Well I made it through all the broccoli: two heads became a cream of broccoli soup. Recipe called for frying the veggie to carmelise and deepen the flavor. I decided to roast them on high heat instead; save me from the unneeded calories and I can still have dessert 😉.
Two more became the base for a cheese and veggie quiche, one was flash frozen for stir fries and the last became broccoli slaw.

The zukes are prepped and back in the fridge. I’ll figure out what to do with them later in the week. I’ve ratatouille on my mind but tomatoes aren’t ready yet so must think again.

Having a couple of Hummer Bros. hotdogs with slaw on the side just because they make me think of summers past. And that’s dinner tonight.
