What’s for Dinner Tonight?

Ended up at my favorite seafood restaurant Friday. DH had the softshell crabs, I had my favorite seafood diablo.

Saturday was a heavy yardwork day and our daughters both came to help. They decided they wanted pizza, which DH was so happy about. My stomach just couldn't handle it so I just made up a bowl of ramen for me.

Sunday was busy with lots of errands and some more yardwork (it's really a struggle getting it on track this year). A few friends were asking to come by so we decided to make it easy with a shrimp boil and I picked up a fruit flan for dessert. Everyone seemed satisfied so I guess cutting corners worked out well enough.

Yesterday was parent chores and more yardwork. DH decided he really wanted steaks so we had ribeye, sweet potatoes, grilled some asparagus and a salad.

Today will be grilled chicken, probably just with some BBQ sauce. I marinated some asparagus yesterday to go with it and the salad I made yesterday will be plenty for today so it will be pretty fuss free tonight -- which I'm not sad about.
 

We went out for breakfast and I had the red, white, and blue French toast.

I’m headed to a friends around noon for a cook out. She’ll have burgers, dogs, turkey burgers, and chicken. The rest is pot luck. She asked me to bring dessert.

I’m not sure if we will need dinner but if so I’ll be winging it.

Last night we tried another new restaurant. Amare in the Swan Reserve. It was also really good. The service was great! I had the braised lamb cappelletti and a glass of wine. DH had the porterhouse with an old fashioned.
Old Fashioned... He speaks our language.

How do you prepare it? As I mentioned, we've never tried it, but I'm desperately looking for a good potato substitute.
Not who you asked, but our store will have the butternut squash peeled and split in half, so I buy that. I chop it up and boil it in salted water until tender, drain it, and then I mash it with butter. Add salt and pepper to taste. I also add a little brown sugar (to taste). Yum!

Awesome! Thanks to both of you. We were planning to mash them the same as we would mashed potatoes (with milk). I'm glad I didn't try to make it yet.

I LOVE butternut squash. We don't see it in our markets until Fall usually...but Trader Joe's will have it cut up in containers, year round. I like it mashed...but I really like it roasted...it gets all caramelly and such. I toss it with either butter or olive oil and whatever herbs I feel like for the dish. https://www.loveandlemons.com/roasted-butternut-squash/

Yesterday we had cheeseburgers and chips. I reheated the chili that I brought on the camping trip and grilled hotdogs for anyone who wanted a chili dog too. We were just trying to finish everything up before checking out of the campground today.

Tonight…no cooking! Pizza and garlic knots. Pepperoni for the family. I had chicken Parmesan pizza.
