What’s for Dinner Tonight?


Grilled boneless pork chops, roasted butternut squash* & either leftover green beans or cream cheese stuffed celery. It depends on my mood later tonight.

*We decided to try the roasted butternut squash first, since we had mashed sweet potatoes last night. I'm hoping the squash DH bought will be big enough to save half for mashing later in the week. Time will tell.

I made a chicken/pinto bean "filling" for DH to use for suppers while I was gone over the weekend, so we used that up. It was so late when we got home tonight! I put out a layer of tortilla chips and put the filling on them, then put cheese on top and baked it to make cheaters-nachos. Had them with salad.

I've gotta say, reading what everyone is eating is killing me. Everyone's meals sound so much better than ours. In case you didn't know, trying to eat heart healthy stinks. :p We did enjoy the butternut squash last night.
 
I picked up a pizza in my way home and served it with a salad. We leave for vacation in a week so I need to figure out food so we use up what we have.
