Tonight is Trader Joe’s lasagna with salad. Easy and comfort food since the weather here is kind of dreary.

We took my parents out for lunch today. I had a really good mushroom Swiss burger.

Just got back home and it’s gorgeous out. Sent hubby out to Trader Joe’s, so that we can grill some chicken sausages & corn. I’ll make a salad and we’ll have some fresh strawberries. That will probably be a late lunch and good enough. Maybe some fun snacks for later tonight for The White Lotus season finale.

Just back from vacation last night. Tonight is swordfish steak, tzatziki sauce, pasta salad, green salad.

I help out a friend on Mondays & Fridays when I’m in town, and it’s supposed to be my husband’s job to cook on these days. He’s retiring soon, for the 2nd time, and announced that he wants to learn how to cook.

I'm going to try to warm up a chilly Monday bringing a rainy afternoon/evening with a zesty, tangy pot of Taco soup.

It's taco night for us. Beef for meat eaters, veggie chorizo and/or black beans for vegetarians, corn, tomatoes, lettuce, onion, cilantro, avocado, cheese, sour cream.

I stopped on the way home from work and got a rotisserie chicken and made mashed potatoes and buttermilk biscuits with it.

Took a bunch of frozen zip lock bags out of the freezer this morning so I’ll be fine for the week as it were.

Wife came back from Phoenix with sandwich from Popeyes... border living gets no respect..
They gave us a slims chicken but no Popeyes franchise... and yes I ate the bun... have to... pickle sauce drips.

Ok, ladies & gents here’s the update on my husband’s dinner! He did a great job. There are things that I would change about the recipe, but overall it was delicious and he followed it to the T.
