What’s for Dinner Tonight?

I help out a friend on Mondays & Fridays when I’m in town, and it’s supposed to be my husband’s job to cook on these days. 🤨 He’s retiring soon, for the 2nd time, and announced that he wants to learn how to cook.

I gave him this recipe for this evening’s dinner.

Ok, ladies & gents here’s the update on my husband’s dinner! He did a great job. There are things that I would change about the recipe, but overall it was delicious and he followed it to the T.
 
Catching up again....

Friday - When in Wisconsin, we like to eat at a supper club at least one night. This was the night. We ordered Rumaki (bacon wrapped water chestnuts) to share for an appetizer. DH wanted the Fish Fry. I'm not a fan of fried fish, so I also ordered sauteed Scallops w/a Twice Baked Potato. Unbeknowest to us, the meal included bread service, a relish plate (which was delicious) & soup or salad. We chose Clam Chowder. It turned out that it didn't really matter what we ordered for entrees. The appetizer + free/included food were so good that we didn't have room for those.

Saturday, we had a late lunch, followed by a shared tuna sandwich, before going to watch dueling pianos. The light dinner left us a bit hungry, when we got back to the hotel. We grabbed a surprisingly good sandwich from the hotel's grab-n-go section on our way to the room.

Sunday - We shared Bacon Wrapped Dates (a first for us) & BBQ Ribs w/mashed potatoes & mixed vegetables.

Tonight - Pork Belly Bao Buns & Ramen

Took a pack of defrosted chili and turned it into a soup by adding a can of Rotel and some chicken broth. Had planned to make tacos with the chili but once a week is enough. Sprinkled a handful of spinach on top when it was almost heated through and no need for a salad.
 
I’ve missed a few days. I don’t even know why! 😂 Over the last few days I’ve made Chicken Fricassee served over noodles, a roast beef with rice-a-roni and green beans (We haven’t had a roast beef dinner in such a long time!) and tonight we had Chicken fajitas, white rice and corn. Tomorrow we’ll be ordering in as dd has a lacrosse game that I’ll be going to watch and dh will be coaching his first game of the season. It’ll be a late night and I know I won’t feel like cooking once we all get home. It’s so cold here right now. I’m not necessarily looking forward to sitting out there but it’ll be nice to see her play. I just wish spring would come already!
 
During my lunch break I mixed up a marinade for a flank steak that I'll put in to broil tonight. For some inexplicable reason I've decided to try out a recipe that promises easy homemade naan bread that doesn't require kneading. I have some nice green beans to steam and I'll pull together a side salad with a spinach base to make sure I have a couple sides with the steak in case the naan is a flop.
