What’s for Dinner Tonight?

With my dad's increasing health issues, the new normal for the foreseeable future is for DH and I to go to my parents' house on Tuesday directly after work to cook dinner, then stay over (I'm off on Wednesdays and plan to help in the home and with errands, drs appts, etc.) and then make dinner again Wednesday night. We will leave from my parents' house to head straight to work on Thursday mornings. DH and I share a car and work at the same place which is why this is is the gameplan. All this to say, planning is going get interesting since now I have to take into account my parents' tastes/preferences two nights a week and really be prepared on Thursdays to avoid take out/eating out. I have to get very organized because I have to plan work day breakfast and lunches to be packed accordingly for the days we will be at home and away from home. It's going to be an adventure. Thankfully DH is very supportive, easy going, and helpful and I'm not figuring this all out alone.
I’m sorry to hear about your dad’s health issues but what you are doing for them is amazing! Your family will be in my thoughts.
 
We had Monday off for Labor Day and I took Tuesday off so of course the rest of the week is crazy as I try to catch up. I didn’t leave the office until 6 so I grabbed grinders from a pizza place in my way him. DH has meatball and I had eggplant parm.
 
Son is back on this coast before returning to work so making the most of our time together.

Tonight it’s Szechwan eggplant and peppers in garlic sauce with roast pork added over rice. His favorite Chinese dish was eggplant in garlic sauce so guess he’ll enjoy it.

For dessert I made a stone fruit medley cobbler with vanilla ice cream. I’m on a frozen dessert kick so wish I could have made the ice cream. Christmas is coming; wonder what that giant elf will leave me? 😉
 

Time to replenish the freezer. The beans I soaked yesterday are becoming a 15 bean soup gone Frenchified 🤣. I’m using a French bean soup method as the base and then veering back to whichever American region makes bean soup, lol.

I’m also soaking great Northern beans tonight so that Monday or Tuesday, I can make Potage Purée Soissonaise which is a white bean soup.
Half the remaining processed tomatoes remain to make a tomato and corn soup but I’m trying to hold them until Tuesday for an ingredient at the farmers market.

Finally, I’ve a pork roast marinating in the fridge. It’ll be a pernil, Latin style with lots of garlic.

Tonight’s dinner will be pulled pork with carrot slaw and since I’d one potato left turned it into potato salad.
I love reading about the variety of things you make-dinner always look like fun at your house!
 
@dizneegirl- you reminded me of a story my Mommy told me about her childhood in Jamaica with her Granny throwing logs in the stove while Mom raced to the cornfield to gather corn cobs to put in the boiling water for a few seconds. Just remembering the smile on her face as she told the tale; good times.

@Owlpost23 - cooking interests me like a science nerd playing with a chemical set, lol. Speaking of which the Latin style pork roast was flavorless due to my inability to properly explain how to season it to my health aide. Something about pushing the wet rub into the slits in the roast didn’t translate so it’ll become more barbecued shredded pork🙄.

So I’m on my own again tonight. Son is visiting his Aunt in Westchester so I reached into the freezer and pulled out some chicken soup minus the noodles.
I’m having a banana for dessert and saving the slice of last night’s cobbler for breakfast tomorrow.
 
I managed to injure myself getting the mail. The mailbox is on the house and I have to stand on my tiptoes to see if I have everything. The top of the mailbox slammed closed on the bridge of my nose and I have a bruised nose, eye, and a headache. I have no idea how I do these things. 🙄 I wasn’t up for cooking so we had leftovers.

DH had surgery today. One night in the hospital, so I am on my own.
Staying in a hotel, up early....3:30, so too tired and hot to find a place to go eat.
I had a couple pretzel bites, an apple and son granola chunks
 
It was a very long day spent solving numerous major problems with Amazon, UPS and Comcast (Xfinity). All involved overseas help desks. "Nuff" said. 8-)

Embarrassed to say: Frozen Jalapeno White Castles for both me and DH.
DH was thrilled. He grew up on real White Castles and even loves frozen in a pinch. 8-)

(We honestly do eat healthy most of the time and are in good shape).
 
Postscript: The other day I decided to make Smash Burgers at home. They turned out 100% great and my kitchen wall, stove top, counter, everything, turned out a100% disaster with grease.

Next time, going to 'Smashburgers'.
