What’s for Dinner Tonight?


Lemme get this out of the way: don’t bother making chicken tortilla soup with fresh tomatoes; kind of a waste as you could certainly put them to better use.

New home attendant today. Sigh. Apparently, I didn’t give my last permanent worker enough hours for a decent salary so she’s off to greener pastures. I get it but it’s boring telling someone where my cleaning supplies are, how to cut veggies, blah blah blah. Today’s worker was very pleasant and I felt comfortable letting her pick most of the produce at the farmer’s market.
We knocked off a good bunch of work ( cut kernels off corn cobs, portioned soups for freezer, stuck a pork roast in the oven) and sorry I’ll probably never see her again- the goodies always have the pick of their full time jobs and prefer sleepover positions.

Anyway she helped me set a nice table for self and served me spaghetti Bolognese with a green salad on the side.
 
There was a shrimp boil this weekend we still have leftovers of (the sausage and potatoes). I picked up fresh corn from a farm stand.

So, going to chop up the leftovers, boil the corn and then de-cob it, and then toss the chopped leftovers and corn together and make a hash of it. Will serve an egg on top. Not sure why there was no corn left in the leftovers - I was not at the shrimp boil this time and they forgot to do so much - no garlic, tiny bit of Old Bay, maybe no corn?

I love this idea, never even occurred to me despite being right in front of me.

Just a simple spaghetti tonight with leftover green salad from last night.
 
Tonight I'm making fried chicken cutlets, baked potatoes, and fresh corn on the cob. Dinner is not until 8:30 in my house, but I guess I'd better get my butt in gear soon. I have to shuck the corn and get the oven heating and the potatoes scrubbed.
 
DH had a brisket burger and I had a black bean burger with cheese, pickles, and tomatoes. We had a cucumber and tomato salad with it.

I’m hoping to harvest the rest of the potatoes this week. You never know what you’ll get but the first bag was great so hoping for a good harvest. I’ll need a potato recipe plan soon!
