What’s for Dinner Tonight?

Quick movement requires so many last minute thoughts. Thankful my toiletry bag is already packed and by happenstance, I’ve been buying new pieces to add to wardrobe. Most are still folded in their shipping bags so into the suitcase they go with minimal care.

“N” is older than the ex and me (he was the family baby while she was a teenager when he was born) so I’m worried, hopefully needlessly. And yes, DGD is still in Paris and “N” is a big reason why. She’s such a sweetheart! Been putting off seeing her for much too long in my stupid vanity to be wheelchair-less. Reality check: it just isn’t as important as I think at times.

Put away as much food as I could and am giving the apt keys to a niece so she can stay here while I’m gone. She promises to keep the fridge clear and clean so appreciated on short notice. Paying my week long home attendant off the books to maintain the house while I’m gone so something else to not worry about. Set up a tele-visit with my primary so she can re issue my meds (running low). Can’t think of more and if I forget something they’ve stores in France, lol.

Ate a bowl of carrot and cauliflower soup with a half portion of Caprese salad, tonight. Had some pineapple chunks for dessert.
Hopefully, your SIL will be better than you except, when you arrive. It sounds like you guys have a special relationship. You'll both be in my thoughts.. :hug: Safe travels!
 

We were away visiting dd at college this weekend. So a couple different restaurants for us. Friday I had shrimp tacos, rice and beans and I had a peach margarita. Last night, Parmesan crusted chicken breasts, cheesy garlic mashed potatoes and steamed broccoli. Dd was just happy to not be eating dining hall food. 😂 This morning before we hit the road, we took her to Bob Evans where she had a breakfast big enough for two full grown men! I also had her order something to go for dinner later. It’s spring break so the dining hall has limited hours/options but she has to be there for lacrosse. And now we’re about 4 hours into a 10 1/2 hour drive.
 
I have a plethora of eggs ( I know...weird with all of the shortages going on) to use before we head out of town for a few weeks.
So, I'm going to make a spinach, tomato and onion frittata. I have some hashed browns to use and I'll probably make a fruit salad as well.

We're staying in a cabin for the next three nights and want to avoid going out to eat as long as possible. We stopped at a grocery store on the way in and bought some kind of beef w/noodles frozen meal to nuke. We're nuking some corn to go with it.

As a side note, we stopped at an Aldi first. We don't have one near us. I've heard so many people talk about their heat & eat meals, so I had to check it out. We couldn't find anything there that both looked edible and microwave heatable. 🙁

I totally agree. I want to like Aldi's. But every time I go into one I'm totally disappointed. It doesn't help that I'm also baffled by paying 25c for a cart. Not that I mind paying, I couldn't figure out how to do it the first time. HAHAHA
 
Last night was a vegetarian meal of ratatouille (didn’t feel like eating the rice that came with it) and a glass of champagne on Air France. Alright, I should have foregone the wine but never been known to bypass free, lol. Did refused breakfast on the plane but of course now I wish I hadn’t 🤷🏽‍♀️.

Staying at a hotel currently since I arrived at an ungodly time but the kids will pick me up in a few hours. Left timed emails to various Euro friends letting them know I’m here, why, and when to contact me; that will be interesting. Haven’t seen any of them since before the pandemic and what a difference a day makes.

It’s a civilized hour now so I’m going to order some breakfast. Be well, all and I’ll catch up later👋🏾
 
Yesterday was Sunday dinner with my parents. Everyone was there plus my son’s friend so 12 of us! We had prime rib in freezer leftover from Christmas. My DH bought a huge prime rib, but my sister’s family couldn’t make it so we had the other half yesterday.
Tonight is shrimp stir fry.
 
No idea what’s for dinner tonight. The frittata was a success and used up quite a bit of veggies that needed to go before we leave.

We head out to Maui for 2 weeks on Weds, so I won’t be making a run to the store for groceries. Might have to scrounge around for some canned soup in the pantry.
