What’s for Dinner Tonight?

Haven't tried them, but a friend told me they buy bison meatballs at Trader Joe's that are very tasty. I made a note to pick up a pack when I next shop there -- but keep forgetting anyway.
Good to know. Unfortunately, we don't have a TJ's nearby. Hopefully, they'll open one closer to us soon.
I shop in SE Pennsylvania/Northern Delaware and most of the shops I go to carry it. Usually just the ground bison. Occasionally I see steaks.
My grocery shopping is done in South Florida & Western North Carolina. I've never seen Bison in either location, but now I'll know to keep an eye out for it.

Tonight it’s Meatloaf and mashed potatoes, with a TBD green veggie on the side. I’m trying out a new recipe for meatloaf from the Lost Kitchen cookbook.
What did you think of the meatloaf? Any other favorites from the cookbook? I love the show, and it would be a dream to get to attend a dinner there - though I live almost 2,000 miles away.

Thanks to all for posting your dinners. I'm enjoying "lurking" and getting so many great ideas! :flower3: Looking forward to hearing about your Super Bowl spreads. 🏈

DH and I went to happy hour(s) on Friday so SIL abandoned the dinner plan (pigs in blankets) and bought pizza. That upended Saturday night's menu plan (make your own pizza) so I "winged" it. Made a pumpkin curry soup with cauliflower, bacon, and spinach/ricotta tortellini, bagged bacon-Cesar salad, and refrigerated crescent rolls.

Tonight is "Super Bowl Night" so we'll have buffalo chicken dip, sticky chicken drumsticks, and pigs in blankets. Not sure if we'll have any vegetation or just go with it... maybe celery sticks with sun butter.

We are staying in. We were supposed to get 10 inches of snow but got 3.

we are having clam chowder for lunch. I got a bunch of snacks for the game so I’ll see what we are in the mood for.

Pigs in a blanket
Wings
Mozzarella sticks
Brie bites
Potato skins
Vanilla oranges

I thought I was going to be snowed in so I planned a canning weekend. Yesterday I made cherry almond jam and this morning I made and canned pasta sauce.

I’ve never made pasta sauce. Would you mind posting your recipe?
We were supposed to get 4-8 in and only got 3 maybe 4.

@ddluvsdisney you can obviously skip the canning step. It will stay good in the fridge for probably 2 weeks. If you can it probably 2 years. Mine has never lasted that long lots of friends take a jar as a parting gift 😂

I use jars of garden tomatoes that I can because I have a large garden but you can use store bought canned tomatoes. I made a big batch because I can it for easy weeknight meals. This makes 12 jars so scale the recipe as needed.

12 jars of canned whole tomatoes. You can make them any texture you like. My mom crushed them with her hands, I have a bonus daughter who doesn’t like chunky so I toss in the food processor to make it smooth.
2 tablespoons sugar, salt, and garlic powder
3 tablespoons each of basil, oregano, parsley, and Italian seasoning*
6 small cans or 3 large cans of tomato paste with Italian herbs. If I can’t find it with Italian herbs I bump up the dry herbs a bit
2-3 ham hocks, tough skin/fat layer removed
1 bunch flat leaf parsley.

Put everything in a a pan and bring to simmer.

After 1 hour remove the parsley

Cook another 2 hours. Remove ham hocks. Put in canning jar and process in boiling water for 25 minutes.

*I don’t really measure the dry herbs I dump it in my hand but I think those measurements are close.

Ooo! I will look for those. Thank you!
Originally from down that way and we used to buy bison burger at Wegmans, so another place you could check for it. ;)

Still stovetop only (new stove comes weds :hyper:) so after reading about them here... tonight I tried making salmon cakes for the first time using a recipe from AllRecipes.. winner winner, will def, do again.

https://www.allrecipes.com/recipe/240130/scrumptious-salmon-cakes/

This time I used a combo of canned and leftover, but I think I will just get a little more salmon when I buy it and add this into the dinner rotation as a way to use leftover salmon.
