What’s for Dinner Tonight?

Saturday’s dinner party was a blast!
A nice mix of old and new people with food being the common bond, lol.
The only dish I would consider not doing again was the scallion pancakes: too much frying that required the noisy kitchen duct and thus interfered with conversations. Otherwise, it was just what the doctor ordered for a cold Super Bowl Sunday weekend.
Which I was reminded about on Sunday but more on that later.

Tonight had a meal of party leftovers: Filipino spring rolls, sticky rice, soy chicken and roasted bok choy + asparagus.
Shock and surprise, I even heated the food up before eating 🤭.

Got an unexpected call from some of the man’s co workers during the game. We used to host a huge as I called it “Stupor Bowl” party which ended when we left Manhattan. Through the wonder of modern technology, they set up a Zoom call that allowed all to converse and comment while the game was on.
It was so reminiscent of times past and made me smile inwardly. I begged off after 30 minutes so they could continue the frivolities and I could go to bed 😜. They did share some great pics of the man most of which I’d never seen, so I’m adding them to my collection.
 

Still stovetop only (new stove comes weds :hyper:) so after reading about them here... tonight I tried making salmon cakes for the first time using a recipe from AllRecipes.. winner winner, will def, do again.

This time I used a combo of canned and leftover, but I think I will just get a little more salmon when I buy it and add this into the dinner rotation as a way to use leftover salmon.
Oooh, you reminded me I have salmon croquettes in the freezer from a quadruple batch I did while batch cooking for my in-laws a few weeks back. That's dinner plan done and dusted -- before noon, on a Monday!

Your Lunar NY menu sounded fabulous, so glad it turned out to be such a good time. At least scallion pancakes are delicious anyway.

So glad you had such a happy Super Bowl surprise. It sounds like your friends were missing much more than your parties, so I'm sure they appreciated spending some time enjoying the game in your company.

I've been getting some subtle (some not so much) hints the past several weeks because we often wound up throwing what turned into a large Super Bowl get together by default because, believe it or not, I somehow was considered "the one who cooks" among the bulk of our extended family and friends. The changes in our lives the past few years blasted that off the calendar along with other things, but several people are apparently hoping we'll step back in. Honestly there's no way I have the energy or motivation to do even 2% of the prep and cooking those parties became, even if we had that kind of time anymore. It was nice because it was an extra opportunity to catch up with some family and friends we didn't see at the holidays or maybe don't get together with more than once a year if we're lucky, but I kind of wonder if my social battery is losing steam and my introvert side is really dominating now -- along with my nonexistent work ethic when it comes to cooking.

Well, it was supposed to be chicken breast and a few sides, but it's still frozen solid in my fridge. So, looks like I'll take some breaded chicken filets out of the freezer, throw them in the air fryer and make them into chicken parmesan along with some spaghetti on the stove.
 
I made the Creamy herb chicken that was shared last week. It was really good and easy. I can’t remember who posted it but thank you for the idea.

I bought a family pack of chicken breasts on sale so we are having chicken again tomorrow. I decided to prep the chicken while prepping for tonight’s dinner. I butterflied the chicken and pounded it then rolled it stuffed with stuffing. Those will set up in the fridge overnight and I’ll just have to bake it tomorrow.

I’m feeling out of control with stuff everywhere so I organized the one thing I can get to. My canned good shelves. I feel like they are so pretty and shouldn’t live in my basement.

It's my son's birthday tomorrow, but I'm making his dinner tonight. 5 pounds of spicy Korean bbq chicken, 1 pound of regular bulgogi, Korean glass noodle salad, rice, kimchi, cucumber salad. I used to spend time making sooo many little side dishes (banchan) and fermenting my own kimchi, but I'm the only one who cares, so I skipped all that. This is for only 4 people, but my son asked for LOTS of leftover chicken so he could eat it all week.

Your meal sounds delicious. :bday: to your DS! I'm glad you were able to celebrate together. We're going to be away from our DS on his birthday this week. :(
 
Yeast rolls, House Salads, 3 piece Catfish w/fries (for DH) & Chopped Steak w/Mushrooms & Onions & Baked Potato (for me). We brought back leftovers in case we're stuck in the hotel in a snow storm tomorrow. I'm "not so" secretly hoping that will happen. Snuggling with my DH & watching movies, while it snows, sounds like a perfect day to me.
