What’s for Dinner Tonight?

It was an exhausting kind of day. Arrived for a 9:00 am medical appt and told I had no insurance coverage- ehhh!!!!! It was on from then until about 4:30 pm when finally told (in writing) it was a mistake.

Heated up the lasagna soup (minus the noodles) and so happy I hadn’t put it in the freezer yet. No advance work for the Asian New Year party today; too busy doing stupid stuff so I’ll try to make it up later in the week. Not tomorrow though as I’ve another medical appointment.
Ugh, been through more of this than I care to think about. Beyond frustrating.

Since I have to arrange special transport for all of my mother's appointments I pester, pester, pester everyone beforehand and work like a demon to make sure something like this doesn't happen because it's a couple hundred $$ in transportation fees for an oopsie on somebody's part.
 
Sheet pan sausage and peppers with spaghetti and sauce on the side. Some of us like the sausage and peppers without the noodles, some with and some with the noodles and sauce. Everyone found their combination tonight. ☺️
This is a new combo to me. Interesting idea.
DD found a recipe for sausage-rigatoni bake that she wanted me to try out. It was weird... Two cans of crushed tomatoes, 4 tsp salt, 2 tsp sugar, Italian spices, a pound of sweet Italian sausage, and a stick of butter go in a 9X13 pan in the oven, uncovered, at 350 for 45 minutes. Stir well, add 1 cup of water and a pound of uncooked rigatoni, stir well, cover, bake for 25-ish minutes. Top with mozzarella and put back in the oven to melt. It took forEVer and tastes just like it would have if I browned the meat in a frying pan, added it to the sauce, boiled up the rigatoni, and threw it all together, in about half the time. Everyone liked it, but I wasn't a fan of the texture of the noodles. Oh well... that, a bag of salad, and a loaf of sesame seed encrusted french bread and voila! Supper!!

Sorry, you lost me the first time you said "stick of butter". Cannot wrap my brain around the idea of Italian sausage cooking with butter, let alone a full stick. 🤢 I'm sure your preferred method would be MUCH better.

Yeah, the stick of butter thing... The "bake" came out fine, I guess. They all liked it. I am not a huge pasta fan to begin with, and I really don't like what happens to the texture when "raw" pasta is cooked in sauce in the oven. I don't think this is a recipe I'll repeat, that's for sure!

Tonight is Thai green curry lentil soup, also a new recipe from DD's magazine. It sounds pretty tasty, but we'll see. It all depends on how spicy green curry paste is. I have some leftover roast chicken we'll have on the side, some crusty rolls and yet another bagged salad mix. In my defense, they are on sale this week and we eat the entire bag, so no leftovers. I hate making a traditional salad, and we don't remember to eat them often enough to make it cost-effective, as the lettuce turns to soup, leftover cut tomatoes get squooshy, etc.
 
I'm meeting both DDs tonight for a concert movie so I'm picking up a chicken shwarma salad beforehand so I can grab a bite before I leave and DH will have a dinner waiting when he gets home. Of course the weather is throwing a curveball at us and I know I'm going to be anxious throughout the whole thing worrying about snow, sleet, ice coming down while we're in there.

Yes, the filet was good, the ice cream is good, the lasagna was very good.
The fish and chips at lunch, Ramen noodles, make your own salad. The burgers, all the breakfast items.

Sigh .... going to be take out or something I can cook on the stove top... my oven died last night in the middle of cooking my salmon when the heating element broke... never pan fried it before, but aside from falling apart when I tried to flip it, it came out ok

edited... ran to the market... since I still have the stove top....

burgers with the fixins tonight and potato salad.

tomorrow.... kielbasa patties, pierogis with beans (and box mac n cheese for my picky daughter)

Last night we had chili, cornbread and white rice. I was lucky enough to have a 2 hour delay for school due to the snow/ice storm. It seems like nearly every school district in our county had a delay except my dh’s! I felt bad for him as he was waking up at 5:30. I love a delay. I could have used the extra time to actually accomplish something but just slept in instead. 🤣 I plan on making sausage bread for our school’s Super Bowl “party” tomorrow. I really should have prepared for that and just made it this morning. Oh well. The bed was warm and comfy and I loved every extra minute of staying in it!

We also had a 2-hour delay, and I set my alarm for 2 hours later, lol! Feeling rested today!

Tonight's dinner will be gluten-free spaghetti with jarred tomato sauce and sauteed ground bison—a lighter version of my favorite comfort dish!

We try to substitute ground bison for beef when it's available at the store. It costs about $2 more per pound compared to organic ground beef, but it's worth it to us.
 
DH only left for work a little bit ago and since I WFH it was nice to have a bit of time between calls, Zooms and online chats to get some extra time to talk to him. I was working my idea bot hard, too, but still don't have a dinner plan shaped up. Instead I got distracted trying to offer up design ideas for him to get a little online side venture up and running that we've been working on with our daughters. It's not really for business or commerce, but there will be a minimal charge -- more just an offshoot of a hobby related to an interest of our daughters that they wanted to be able to share with other fans who enjoy the same thing.

Funny how my idea bot was all fired up and happy, happy to spin design after design -- and now is grumpy that the hours are ticking away and it's coming time to figure out what I can put on the table tonight and I just don't wanna! :headache:
