Good to know. Unfortunately, we don't have a TJ's nearby. Hopefully, they'll open one closer to us soon.Haven't tried them, but a friend told me they buy bison meatballs at Trader Joe's that are very tasty. I made a note to pick up a pack when I next shop there -- but keep forgetting anyway.
My grocery shopping is done in South Florida & Western North Carolina. I've never seen Bison in either location, but now I'll know to keep an eye out for it.I shop in SE Pennsylvania/Northern Delaware and most of the shops I go to carry it. Usually just the ground bison. Occasionally I see steaks.
What did you think of the meatloaf? Any other favorites from the cookbook? I love the show, and it would be a dream to get to attend a dinner there - though I live almost 2,000 miles away.Tonight it’s Meatloaf and mashed potatoes, with a TBD green veggie on the side. I’m trying out a new recipe for meatloaf from the Lost Kitchen cookbook.

we are having clam chowder for lunch. I got a bunch of snacks for the game so I’ll see what we are in the mood for.

I thought I was going to be snowed in so I planned a canning weekend. Yesterday I made cherry almond jam and this morning I made and canned pasta sauce.

Thank you!@ddluvsdisney you can obviously skip the canning step. It will stay good in the fridge for probably 2 weeks. If you can it probably 2 years. Mine has never lasted that long lots of friends take a jar as a parting gift
I use jars of garden tomatoes that I can because I have a large garden but you can use store bought canned tomatoes. I made a big batch because I can it for easy weeknight meals. This makes 12 jars so scale the recipe as needed.
12 jars of canned whole tomatoes. You can make them any texture you like. My mom crushed them with her hands, I have a bonus daughter who doesn’t like chunky so I toss in the food processor to make it smooth.
2 tablespoons sugar, salt, and garlic powder
3 tablespoons each of basil, oregano, parsley, and Italian seasoning*
6 small cans or 3 large cans of tomato paste with Italian herbs. If I can’t find it with Italian herbs I bump up the dry herbs a bit
2-3 ham hocks, tough skin/fat layer removed
1 bunch flat leaf parsley.
Put everything in a a pan and bring to simmer.
After 1 hour remove the parsley
Cook another 2 hours. Remove ham hocks. Put in canning jar and process in boiling water for 25 minutes.
*I don’t really measure the dry herbs I dump it in my hand but I think those measurements are close.
I forgot to say I cover the pan with a lid while it summers for 3 hours.Thank you!

Whatever fills the tummies, right?I'm embarrassed to say that we are having frozen pizzas again tonight. I am cleaning out my garage and too tired to cook. This time we're having Screamin' Cicilians.
