Have you checked out the menus on WDWIG.com? That's a good start to help you find a place that looks like it has WW friendly type of food.
Last week I went to the Sci-Fi for lunch with friends. I ordered the house salad for an appetizer and then the BBQ chicken sandwich for my entree. I just didn't eat the french fries, the bun, or the fried onion straws (only the grilled bbq chicken breast). I suppose I could have asked for the salad w/ a piece of grilled chicken (it wasn't an option on the menu but I know Disney loves to please people!)
Today we went to the MK and ate at Pinocchio'S Vllage Haus. I had the chicken garden salad. It was light and refreshing. Most of the dressing had collected at the bottom of the bowl, so that made it easy to not eat too much dressing (vinagrette). There was maybe about 3 oz of chicken in the salad and not much cheese at all. My husband had the turkey sandwich - probably about 4 oz sliced turkey meat (deli style), lettuce, tomato, and honey mustard dressing. The roll was whole wheat, he said it was alot of bread (he could have probably removed some of the inside of the top part of the bun...)

That sandwich is served with chips, and Baked Lays WERE available, so that's what my DH got.

I think if you don't have food scale with you, you will have to guestimate points, but there seem to be more healthy options in the parks these days.
