I have the Weight Watchers New Complete Cookbook from BJ's. My grandma bought two by accident and gave me one. Anyway, it's got some good recipes in it.
I'll share a recipe my grandma gave me, but it's not in the cookbook and it is EXCELLENT!
Oven Fried Chicken (We call it Pretzel Chicken)
5 oz pretzels broken into chunks
1 tbsp olive oil
1/2 tbsp dijon mustard
1 tsp dried thyme
1 tsp dried marjoram
1/4 tsp garlic powder
1/4 tsp seasoned salt
ground pepper
pinch cayenne powder
1 3 1/2 pound chicken cut into 8 pieces
preheat oven to 400 degrees
Spray a roasting rack with non stick spray and place into lined foil roasting pan.
Pulse the pretzels into food processor or blender until coarsely crumbled (some small pea size crumbs should remain)
With the motor running, drizzle in the oil and pulse to mix. Transfer mix to a shallow bowl or pie plate
Wisk together the egs, mustard, thyme, marjoram, salt, pepper and cayenne in another shallow dish or pie plate
Work one piece at a time, dip the chicken pieces with one hand into the egg mixture to coat. Then place in the crumb mixture. Use your other hand to press the crumbs into the chicken and all sides turning to coat well. Shake off excess crumbs and place the chicken on the prepared rack.
Bake until chicken is cooked through about 45 min-1 hour (turn chicken over half way through.
