Is it worth while to use a FP for Indiana Jones or Stunt show. If we don't, can we still expect to still get seats? Going in March.

Generally not worth it. Without FP it is still easy to get into these shows. Answers to FP FAQs like yours can be found in the green link in my signature.
 
FP+ is totally not worth it for the stunt show. All you get to do is walk down a different walkway and then merge with everyone else.

We walked right in to Indiana Jones on Sat. Dec. 20th (beginning of the busy Christmas season). There were still plenty of seats available. :goodvibes
 

The theaters are huge. Rarely do they turn people away. There tends to be a Type A approach to attacking WDW that suggests that one should always be first, always beat the crowd and grab the best viewing area/seats. If you divorce yourself from this way of thinking you can free up a lot of free time. Even if you are in the back 25% of people who enter you will get a fine seat and see the same show as everyone else without waiting an hour in line or burning a FP.
