Universal Questions - Last week of August

We are traveling to Orlando and staying at the Orange Lake resort on a timeshare exchange from August 24 - 31. We have no really specific plans other than to do Disney a few days and Universal 1 or 2 days. It has been about 5 years since we were at Universal and our kids are now 11 and 8. I still need to sit down and do my research on each park, but from your opinions, what is the best park to do for kids this age - my 11 DD is a moderate risk person and can do the rollercoasters, but the rest of us are more of the speed of rides at Disney like Soarin, Test Track, Buzz, Kali Rapids etc. We have old passes that are still valid and I believe they are 2park passes, so we could technically do both in a day, but during the heat this time of the year, I doubt I'd be able to do the commando touring! Also, I'm thinking that crowds will be manageable during this week, but since we have the flexibility, is there one or two days of the week that would be best to visit between the Monday to Saturday? Thanks!

my guess for the best days to aim for would be tues, wed, thur for universal.
stay away on weekends.
