Uber/Lyft/etc. or Rental Car in July

There's seven of us going, staying off-site at our timeshare. Two of the children require booster seats. We intend to take one round trip per day if we don't rent a car, plus to and from the airport. I've got questions bouncing around my mind, though: Will we wait long for a rideshare each day because we have 7 people and need two booster seats? Which option is less hassle? Is the drop-off for rideshares any closer/easier to the park entrances than the parking lots? The lowest cost I'm finding for a rental is over $800, plus the cost of parking at the parks ~ how much can I expect to pay for rideshares? What am I not thinking of?
 
Register for Uber and Lyft and you’ll have an idea of what the daily rides will cost. I say idea because I think both are participating in surge pricing and the cost will depend on the time.
The registrations cost nothing and you’ll have a better idea of what type of vehicles are available and booster seats.

I know everyone has their own safety stance, but if the kids are over 6, you don't need booster seats in Florida. Lyft doesn't have any car seats and the ones in a lot of the Ubers were pretty beat up. I'll use them onsite, but without knowing how far away your time share is, I'd be reluctant to recommend them.

With 7 people, you'll more than likely need 2 cars.

There's going to be a wait at park close for ubers.
