Vegetarian chili made with two kinds of beans and corn, vegetable soups made with whatever vegetables I have on hand plus beans for protein, homemade bean burritos, baked ziti, veggie pizza, pasta with spinach thrown in, veggie stir fry, roasted vegetables (broccoli, cauliflower and asparagus), fried tofu with a honey soy sauce, eggplant parm, beans and rice (I often make this as a side dish because my husband and one daughter eat meat- the other daughter and I will just eat the beans and rice plus whatever other veggies I am serving), frozen veggie burgers on occasion (but they are high in sodium), quinoa salads (I make a Greek one and a southwestern one that are really good). We also like lentil soup and of course you can always do grilled cheese sandwiches with tomato soup. I am trying to learn more vegan recipes. I don't eat eggs, we drink almond milk and I briefly gave up cheese but my cooking took a nose dive so I do use and eat a little cheese on occasion.

I used kale and vegetable broth. I also diced and sauteed one small onion along with the garlic. I substituted the juice and zest from 1/3 of a large lemon for the sherry vinegar.

OP, what is your reasoning for wanting to eat more vegetarian? Not trying to be nosey but it may lead to more focused ideas.
For example, lots of people eat meatless 1-2 days a week to save money. If this is the case I wouldn't suggest a lot of meat substitutes as they are expensive and you wouldn't really bed to worry all that much about protein eating meat several days a week still.
If it's to get more veggies for your family, things like beans and rice or other such things might not accomplish that goal.
