Typical meals for a vegetarian?

Would love to eat more vegetarian meals but have no idea what to eat? My family is not big into pasta. What do you eat as a vegetarian? Breakfast, lunch, and dinners? What's good?

We eat a lot of tempeh, seitan and tofu fir meat substitutes- we are vegan as well. Can make your own pizza without meat. Lots of rice/quinoa with veggie dishes. You can make pasta "noodles" out of zucchini. I make my own vegan tuna salad. I can send you more ideas if you would like :)
 
Google or Pinterest "meatless mondays" and you'll find a ton of great recipes.

I personally don't care for meat substitutes that the PP named. I can't adjust to the taste, so I avoid them.

Tacos with fake meat .. and taco salads!
Spinach stuffed tomatoes
fajitas with onions, mushrooms, and peppers with guak and salsa
black beans and rice
soups.. lots of soups
sloppy joes with fake meat and red kidney beans mixed in.
mushrooms : stuffed with cheese and spinach
stir frys
indian food. tiki Marcella is out fav.. just add vegis and no meat.. (lots of mushrooms)
and omlets/ eggs and toast/ pancakes/French toast baked egg dishes
 

I love vegetarian meals but my family has been a little resistive! Some of the things they really like are: my homemade Minestrone soup, cheese ravioli, bean and cheese burritos, but we are often in a rush at dinner time so we eat a lot of easy things like cheese pizza and grilled cheese sandwiches with tomato soup! I also keep my own version of a salad bar in my fridge, I buy a bunch of different veggies and cut them up and keep in containers in fridge with a large bowl of salad greens so anyone can easily make their own salad just how they like it! We also eat a lot of fruit and yogurt or fruit and cottage cheese!
 
I am vegan and I love to cook. We eat so many great things and have a huge variety of meals. Think ethnic foods: Indian, Asian, Mexican, ect. There are so many possibilities. We eat a lot of homemade soups and salads, stir-frys, curries, meals with tofu, lentils or beans to stand in for where you might use meat. I honestly eat way more of a varied diet than any meat eater I know, there are just so many possibilities.
 
I love garden burgers and DH loves them too. I make my own but some stores offer them frozen. Quinoa casseroles are great. Cauliflower crust pizza and cauliflower mash potatoes are really good.
For breakfast I usually have a green shake and add protein powder. Breakfast burritos are great just add lots of veggies.
We eat tacos with just bean and no meat. I am not big into tofu or the fake meat most is full of gmos.
Lots of lentils and beans.
A usual day of meals for me (DH and I work out every day so I pay a lot of attention to amounts of protein, amino acids, etc since I don't eat meat)
Breakfast
-Green shake (Spinach or kale, banana, berries, seeds, protein powder, a scoop of penut buter or almond butter) It changes a bit each day.
- 2 fruits
Snack
-yogurt or veggies with hummus
Lunch varies a lot depending in the day and work out
-Eggs with some toast
-Salad with beans or eggs
-Veggie sandwich
Another snack
Dinner
-Tacos
- Veggie burgers
-Eggplant (different ways)
 
Vegetarian chili made with two kinds of beans and corn, vegetable soups made with whatever vegetables I have on hand plus beans for protein, homemade bean burritos, baked ziti, veggie pizza, pasta with spinach thrown in, veggie stir fry, roasted vegetables (broccoli, cauliflower and asparagus), fried tofu with a honey soy sauce, eggplant parm, beans and rice (I often make this as a side dish because my husband and one daughter eat meat- the other daughter and I will just eat the beans and rice plus whatever other veggies I am serving), frozen veggie burgers on occasion (but they are high in sodium), quinoa salads (I make a Greek one and a southwestern one that are really good). We also like lentil soup and of course you can always do grilled cheese sandwiches with tomato soup. I am trying to learn more vegan recipes. I don't eat eggs, we drink almond milk and I briefly gave up cheese but my cooking took a nose dive so I do use and eat a little cheese on occasion.
 
Since you'll be cutting down on meat, make sure that it's not just vegetarian protein sources that you're adding to your diet. Our daughter is an ovo-lacto vegetarian (eats eggs and milk) and the bigger challenge is getting enough iron. She's learned to love leafy greens like kale, spinach, broccoli rabe, and collards. We tried a new recipe of kale and white beans last weekend and it was a big hit with even the omnivores.

I used kale and vegetable broth. I also diced and sauteed one small onion along with the garlic. I substituted the juice and zest from 1/3 of a large lemon for the sherry vinegar.

Would you mind posting your quinoa salad recipes? We love quinoa but have only found 1 or 2 salads that we like with quinoa.

I am vegetarian and we cook a wide variety of things throughout the week. We usually have a Mexican dish once a week such as baked tacos, taco salad, burritos, etc and at least one Italian dish a week such as spaghetti with lentil 'bolognese'.

For the 'meat' in the tacos I make a lentil taco filling and think it's just as good or better and much healthier than the fake meat substitutes.

I use Pinterest for recipes and you can see my vegetarian board here, I make comments after making something if it is good or not.

Quinoa, I love this pilaf and it uses one dish and is super healthy. Even my meat eating DH likes it as well.

Also we sometimes do breakfast for dinner and I make scrambled tofu as the main dish. I have fooled my mother in law with this because she thought it was eggs and she has said before how she 'hates tofu' and she didn't know!

For example, lots of people eat meatless 1-2 days a week to save money. If this is the case I wouldn't suggest a lot of meat substitutes as they are expensive and you wouldn't really bed to worry all that much about protein eating meat several days a week still.

If it's to get more veggies for your family, things like beans and rice or other such things might not accomplish that goal.

I love vegan eating but find it hard as we're always rushing. We need more quick healthy vegan meals to whip up (already in the fridge) instead of frozen pizza.
 
Get the book How to Cook Everything Vegetarian by Mark Bittman. Even if you eat meat in general (like myself) it is an AMAZING cookbook. Lots of basic recipes that you can then build on with their suggestions or your own.
 
We try and eat meatless meals as much as possible - for $$ and for health reasons.

We use a lot of grains - quinoa and farro being our most used. Lots of rices - brown, black, wild.

Beans are a must - we always have multiple bags of dried, and multiple cans...all varieties.

And of course, veggies.

We love lentil tacos, or black bean tacos. Set out a buffet of chopped veggies, cook up peppers and onions, and make guac. So good.

When they have sloppy joes, I make mushroom joes...just chopped up fresh sauteed mushrooms with the same sloppy joe sauce. Served on a bun!

WE all love tofu, too. So we use that in a lot of meals. It's very versatile.

Breakfasts are a good one, omelets with veggies and cheese, some fruit and you are good to go.

Veggie hash - use leftover veg, potatoes that are fried up, and top with some poached eggs.
