Never used these before... but where can we cash them in the parks/ DTD/ resort area???

You can cash them just about anywhere.

During our last visit we even cashed $50 travellers cheques at the little refreshment market stalls dotted around disney.

Last time we went we had absolutely no trouble using t/cqs as cash and everyone was happy giving us dollars in change. Also we were never asked fo ID but I think that may have changed now.

One other option is if youa re staying on-site, turn them in at the front desk as a credit for your room. Than you can use your "key to the kingdom" (aka room key) to charge all your purchases.
