Top 5 Signatures?

Been to Disney dozens of times and have eaten nearly everywhere else, but NEVER at a Signature Restaurant. We are a professional couple with a 16 year old son. We like steak, sushi, scallops and interesting appetizers/desserts. If you could only pick 5 Signature places, which ones would YOU pick? And why?

In order:

Victoria & Alberts, bluezoo, il Mulino, Shulas, Flying Fish, Bistro de Paris, Citricos, Jiko, Ca Grill, Portabello, Fultons, Brown Derby, Artist Point/Yachtsman, Narcoosees. I hope I didn't forget any, lol.

We've been to each at least 4 times. I rank them based on food quality, presentation, service and restaurant atmosphere. We enjoy a slow paced meal with wine and we want it quiet enough to not notice the people around us.

V&A is exactly as advertised, the best restaurant on property and a rare treat.

Todd English's bluezoo is the most underrated restaurant at WDW, consistently excellent service, much better quality ingredients than any other restaurant aside from V&A, and a menu that varies seasonally while retaining a few favorite items. All in an elegant but engaging environment that is a relaxed respite from the chaos in the parks but not for a second boring or stuffy. V&A is spectacular, but if I had to choose one restaurant to eat at every week (or every day for that matter) it would be bluezoo hands down.

1. Citricos - Absolutely outstanding in every way. Best service I've ever received, on all of my 5 visits there. The food isn't all that creative, but it's good Mediterranean-inspired fare executed well.

2. Tie between Jiko - interesting, exotic flavors, excellent apps
2. and Flying Fish - creative, inspired seafood

4. California Grill - excellent food, excellent service, awesome views!

5. bluezoo - really high quality ingredients, prepared well, making for amazing food. Great service, interesting cocktails, and easy to get an ADR for. The most adult atmosphere of the signatures I've been to.

Other places I've been and would return to - Yachtsman Steakhouse, Artist Point, Bistro de Paris

I have no desire to return to Narcoossee's - they're not worthy of a signature status IMO.

Great food and service. Flying Fish is noisier than the others, but has a great steak. Never been to V&A or Shula's.
