Yes we are cheap on the buffets too. We are paying much higher prices for buffets at Disney(my 11 year old cost $30 at some) so you are starting from a much higher base than any place we have been at home(more upscale buffets also..)I am in the 10-15% range depending on service- Now if we have had great service- plates cleared away and drinks refilled then I would do something closer to 20% but if it is the normal- one drink fillup then more like 10-15% (and I was a waitress at a full service place- an Irish bar/restaurant and I think that amount is appropriate.)Last year there was a big debate about this and I still walked away leaving 10-15%. In a buffet- they are not taking my order, they are not bringing me my food, they are not preparing any portion of my meal(we had to do deserts and salads at my restaurant) so I don't equate the service with a full service meal. Now if I get a real "character" playing up the atmoshere of where I am then I go 20%(typically at AK buffet)
