Oh. My. Gosh. Beef Taco Lasagna=HEAVEN!! :love: :love: :love: Made with lasagna noodles, ground beef, taco seasoning, ricotta, salsa, cheddar and love. YUMMY!!!!!!!!!!!!! Let me know if you want the recipe. Not low-fat/calorie/carb/POINT but I'm sure you can modify it. I want to share the lasagna love with all my WISHpals.

Beef Taco Lasagna: makes one large 13x9 pan. Servings: depends on how hungry you are

Ingredients:
12 lasagna noodles
1 pound lean ground beef
1 envelope taco seasoning
One egg
1 15-ounce carton ricotta cheese
4 cups shredded cheddar
1 24-ounce jar chunky salsa

1) Cook the noodles according to package directions. Meanwhile, in a large skillet, cook the hamburger until it is no longer pink. Drain with a colander, put hamburger back in the pan. Add taco seasoning. Stir it around until it is all mixed together. In a small bowl, combine egg and ricotta. When the noodles are done cooking, drain them.
2) In a 13x9 baker dish, layer 3-4 noodles, 3/4 c. ricotta cheese mixture, beef (not all of it, but enough to cover) and 1 1/3 cups cheddar cheese. Next layer: 3-4 noodles, 3/4 c. ricotta mixture, 1 1/2 cup salsa, 1 1/3 cup cheese. Repeat the first layer over, and if you have more room, repeat the second. Depends on how many 'noodles wide' your dish is. Mine was three.
3) Bake casserole, uncovered in a 350 degree oven for 35-40 minutes. After you take it out, leave it stand for 10 minutes. It's really really yummy!

Dinner: 1 chicken sandwich (3), 1 ham sandwich (3), 1/2 turkey sandwich (wasn't worth it, but 2). Fruit salad (2) and lots of vegibles (vegetables). Water: 16.9 ounces.
Exercise: very little due to abundant activity today. I'll do better tomorrow!

Good morning!!!!!!!!!!!!!! Thanks for poppin' in, Desiree. You could probably do the same thing with strips of squash, or lavers of veggies. Mexican veggies...ewww. I don't like cooked veggies. Try it...it's yummy. (insert a pig licking its lips chowing down on lasagna.)

Okay, yesterday, I REALLY crashed and burned. I thought the grad parties were dinner. They weren't. So we went out to Friendly's. I still planned my meal, didn't get desserts or eat any of the appetizers.

D: It was really late and really crazy-busy with choir practice and the Suburban needed to be fixed, so we had to take the other car so we could get home. Anyway: my planned splurge at Steak n Shake.

Single w/ cheese, ketchup, mustard, lettuce, tomato, fries, salad w/Ranch (16.5)

And I was actually full! <insert jaw drop> I kind of stopped counting, though. Oops. I tried a sip of the cheesecake milkshake. Not too good. Not even palatable. All the better I guess.

Exercise: Active choir practice (2 hours, but I'll only count one. Lots of moving and dancing for it. It's called Four Tickets to Christmas, part of Church Christmas in July.)

Sounds like choir practice was really fun. I miss it. Our church doesn't have a choir, just a praise band, which is cool, but........ Pastor used to be in a Christian Rock band - I forget which one, but have several albums out. Kinda cool.

Jules: Thanks. Choir practice was fun. More dancing, moving and well...moving than I expected! It was fun. One nonstop laugh fest. We had a praise band too, but they are doing their own thing now.

The kids I babysit for...these are the regulars. I usually sit for people's kids who are only children or the youngest, but always used to taking care of themselves. They are usually in 3-4-5th grade. The girlies I sit for are in 4 and 1st grade, respectively. I play games with all of them, but the girls need CONSTANT attention. Way too close in age. They can't occupy themselves! They were giving me attitude, which is fine until you make it personal. So I stormed in the house and gave myself a timeout. I swear these kids are spawn of the devil!! They've locked me in a camper, they've tied me in a chair. They hit and hurt each other, and it bothers me. I think they're out to get me. They also tried to force feed me those Cheddar and Sour Cream chips!!

I just feel like I can't leave them though, even though it'd be a really good thing. I feel like their attitudes (which were pretty stellar before) are a result of their parents' rocky divorce! It's like serving dessert on the Titanic: sink or swim. I feel bad because I really like working with kids, don't get me wrong, but I was with them for four hours. Straight. There is only so much I can take due to my environment.

Bless your heart for sticking with those girls. They do sound challenging! It's great that you can step back and realize that their attitude probably has very little to do with you and lots more to do with their situation. In a way, you're probably helping them right now because you're someone consistent and familiar when a lot of things are changing in their lives.

That family is lucky to have found you!!! Bravo!!!

I wish I was goin swimmin'! Our water park closed and the city pools are NASTY! DD and I keep trying to talk DH into a pool, but aren't being very successful. SIGH!!!

You should have flown over last night. My neighbors have pools, my uncle has a pond, my mom's best friends' son who is getting married has a pool that came with the house and some of my friends had pools. I would have SO shown you the neighborhood, let you swim and have some lasagna. Offer's still open! They don't call it O-HOT-O for no reason.

Jen with one N is at Disneyworld...where is everybody else? Desiree is usually on by this time, Mary Mking628 has been AWOL (and we miss you, Mare. Come back to us!!). I just checked my buddy list. Calena's on and so is Tara (lmhall2000).

Hi there!

I would love to have a pool! It was 95 yesterday afternoon and we haven't even hit the hot season yet. Also, I don't really think that it's possible to wear a bathing suit without feeling exposed. Glad you had fun!
