It depends on what you will be doing. Will you be spending a day or two at a water park or days with no main park visits? You could get a 5 day park hopper plus that would give you 5 park days and 2 water park days. If you want to be at a main park everyday, I would go with the member discounted UPH.
And keep in mind that you can drop the first or last (and sometimes both) days from your UPH.
We are taking a similar trip. Seven nights. Will not be returning in a year. We are opting for the UPH with the members discount. We plan on being in the parks every day - with the exception of our departure day, which we will drop.
We considered seven day hoppers. A lot of DVC members do that. Price wise, through a discount broker (see www.mousesavers.com) it was very comparable (even a tad cheaper) to the UPH with the discount. And we'd be able to save the hoppers for our next trip if we decided to spend a day by the pool, or if one of the kids got sick, or whatever. In the end, the ease of the UPH won over.
