Thrill rides for toddlers

Our 2 almost 3 yr old is 41 inches and we are heading to the world in 2 weeks. He is tall enough to ride most things with the exception on space mountain, mission space, Everest and rockin roller. So how much thrill do your toddlers enjoy? Just wondering how he might do on splash mountain or 7 dwarfs mine train or test track or soarin?
 
My daughter Isabella is very tall for her age. As passholders we counted the days until she could ride the big rides. She loves the trills and gets lots of looks from people when she stands in line for rides like Tower of Terror. But that is possibly her favorite. The first two we tried her on were Splash Mountain and Big Thunder Railroad. Both are thrilling, but not too dark. After that she could wait to ride anything she was tall enough for.
 
Our plan is to start slow and move up from there. If he doesn't like barnstormer- he's not gonna like BTMRR. We go this route at every park (disney or not) and it's worked out fine.
 
I have two daughters (6.5 and 2.5) and we will be going to Disney in December. I have been researching rides as well. I do not think my youngest will grow enough for me to have to worry about her being scared. I am really hoping she has a growth spurt and can ride the 7 Dwarfs Train!
 

Subbing. My almost 3yo guy is 39 inches so I would like to take him on 7DMT. He didn't like the kiddie coaster at the county fair but he had to go by himself because I was too tall - think he might do better flanked by mom and dad but not sure.
 
At 3 years old, my eldest two loved both Test Track and BTMRR. Soarin' wasn't open yet for one at 3, but the other enjoyed it at 3. One wouldn't try ToT until 6. The other really wanted to do it at 3 and totally freaked out - but recovered, since it was her choice and we made sure she really wanted to do it. We haven't done 7 Dwarfs yet, but if many 3 year olds can handle BTMRR, I'd wager a guess even more can handle 7 Dwarfs. My middle child liked Splash Mountain too. (Eldest wouldn't do it due to sensory issues).
 
At 3, my son would go on TOT over and over again. He was, however, a little scared of Splash Mountain. He'd go on it once, and that would be enough!
He loved the coasters too!
 
My almost 3 year old did kali river rapids twice - the first time she started crying a bit at the last drop, but was proud enough of herself that she wanted to try it again - then started crying on the way up. We also tried barnstormer and despite talking it up, she was not a fan and cried on that too. Sigh. I'll have to wait a while for my coaster buddy. :(
