I also wanted to add that I will be going to WDW in May with my brother who has a gluten allergy, so any tips would be great!
I am not too worried about our table service meals, but how hard was eating gluten free at quick service? Did you have to do much advance planning for those or did you wing it? My DH and I have our favorites, but I can see changing things up for my bro.
This trip is going to be a little different for us since we also will be going with my nephew who will be 7. We don't have kids so definitely a change in touring plans!!

A little bit of planning when it comes to quick service will be needed just because more places have more options than others. At the Magic Kingdom you should be fine as well as Animal Kingdom where they just opened an allergy kiosk that has tons of gluten free stuff. At DHS I would recommend Pizza Planet they have gluten free pizza and they have salads they can make gluten free. At Epcot Mexico is the only quick service where he will have a wide selection for him to choose from and not many of the countries will but the electric umbrella should also be good.
As long as you aren't planning on going to Tutto Italia or Via Napoli your table service options should be fine.
At every place quick service or table service make sure you mention the gluten allergy. They will send the chef out to speak with him and let him know his options.
