it was awesome... DH, said this is awesome, and kept eating it, it is so dense and buttery and wonderful.

this will become my goto desert. really it was just what I wanted.

Excellent. Glad you and DH liked it. I'm pulling eggs and the butter out of the fridge. Gonna make it this arvo.

I did rest last night. We had the u-haul loaded up by 1PM so we got some bathing suits at K-mart, went out to lunch at Chili's, where I had two slonny patron margaritas. :rolleyes1 Tyen we came back to the hotel and I waited for the sun to go down and it was cool enough to get into the pool.

We just hung out by the pool sipping wine from the bar, yapping and getting in and out of the pool. Until the entire SLO youth baseball team returned from their pizza party about 9PM. Then we went to our rooms. Today all I really did was ride in the car and make dinner, well and load it up with our suitcases and garbage.

I will also rest at our two nights at the VGC in a couple days. Jacuzzi tub here I come!

So it took us awhile but we have the tamales ready for this evening.

We started with dried beans, soaked overnight, cooked them, then turned them into refried beans with onions and garlic and bacon fat (BACON), added chiptole peppers and cheese.

Created masa and then soaked the husks and then assembled each tamale (40 of them)and then steamed them for 2 hours and they are ready to eat....

Allison ~ I must have missed you were moving/traveling. Sorry about the fender bender, but you are right, that is why we have insurance.

Nan ~ Relay for Life is here in a couple of weeks. Bless all of your hearts. What a wonderful thing to do.


It is going to be a hot one out there today. Probably up in the 90's, but still no humidity so it will be bearable. It isn't the heat that bothers me but the humidity.

I have a Dr. apt in Omaha tomorrow so I won't be around. But I can tell you WFDT - Cheesecake Factory. WooHoo!!! I have to go 3 times a year and that is always my treat after my treatments. Makes it almost worth it.

WFDT ~ Grilled Pork Tenderloin, Vidalia onions and coleslaw.

WFDT? If its Tuesday, it must be baked potatoes with the trimmings. Dinner tomorrow will be at mum's.
 
Sounds wonderful... I am allergic to pineapple, is there a sub for it?

I will check but I bet you could use applesauce and I bet it would be just as good.

Nancy - My best 3D friend used to organise a team for Relay for Life here. I think we walked in 7 or 8 of them in a row. She's "passed the torch" over to her teenage daughter in the last 3 or 4 years. The teenagers now walk RfL and us "oldies" just donate money now.


I also made some cauliflower soup; so DH had some of the soup with a green salad.


DS wants fish and chips for dinner tonight. *sigh* All this nice food; and he wants take-away.

How wonderful that your friends teen is giving so much of her time to this cause. I have to say that watching Kady in that little yellow Committee shirt was really :goodvibes SHe was not an empty shirt either......she was announced at opening ceremony as a Committee Member and folks did stop to ask her questions....which she had answers for :thumbsup2

Tomorrow night we're having hot dogs, beans and cole slaw. Tomorrow will be a heck of a day, we're unloading the truck. :faint:

I am with you Ellen. I can handle heat but the humidity knocks my socks off. We had record heat last week but this week we are freezing! It is 40 degrees cooler right now.

Ladies, I was feeling a bit off yesterday so Buddy told me to take it easy and I did. DInner was leftover grilled chicken for him........turned into sandwiches ;) and I had ham and eggs. I had a big salad but he stuffed his in the sandwiches :rolleyes1

Tonight I have ground beef out so I am going to make a ground beef and mushroom something with some veggies and salad. I am not deviating too much because that dress I want to wear is just a bit too tight. This diet thing is a bit hard though, Saturday night the party was a pig roast/BBQ. Tee food was marvelous, roasted pork that was melt in your mouth tender, chicken grilled over wood, burgers and dogs and every lovely salad you could imagine. There was a huge beverage container with homemade Sangria that kept enticing me too! I avoided all the pasta salads and stuff with mayo and had extra green salad but once the cake came out I did have a little piece.

Sunday was grilled chicken, corn and broccoli and salad. An ice cream sundae for Kady.

Today Marisa and I weigh in...wish us luck!
