Lemon Shrimp Pasta Bake

Ingredients:
2 pounds shrimp (17 to 21 count) peeled and deveined
olive oil
salt and pepper
1 pound angel hair pasta
4 T unsalted butter, melted
2 lemons, zested and juiced
1 cup grated Gruyere cheese
bread crumbs

Directions:
Preheat oven to 400

In a pan place the shrimp and olive oil salt and pepper (I also added 2 cloves of garlic) Toss well and cook until they are pink and cooked through.

Cook the pasta until al dente, about 3 minutes. Drain the pasta reserving about 1/2 cup of the cooking liquid. Quickly toss the pasta with the melted butter, 1/4 cup olive oil, the lemon zest and juice, 2 t salt, 1 t pepper and 1/2 cup of the reserved liquid (I didn't use that much - just add enough for it not to be to thick - you will know) and the shrimp. Place it all in a baking dish and top with the cheese and bread crumbs. Bake 30 minutes or until top is golden brown and gooey.

Lindsay - I don't know how you stand the cold, when it gets below 60 we practically turn into pumpkins. I'm not even sure if I still have a coat, much less where it is!

Marilyn - enjoy your 3 day weekend, being self employed we don't necessarily have weekends. The upside is that when we wake up early enough we can go out to breakfast, like we are now! :goodvibes

Becky - that Cambodian food sounds interesting, I really want to try Pho as well, but can't seem to make it happen.

PIO - fish and chips sounds really good, but every time I get them as take away they are soggy. I have to get them at the restaurant, but sadly we don't have many places close by with good fish and chips.

WFD? Tonight is meatloaf, probably mashed potatoes and green beans.

Hey Jen and UncleR! I've finally got the details for the conference I'm attending in Dallas in September! We will probably fly in on the 12th and leave on the 17th. We're staying at the Warwick. There will be a concert at the Majestic Theater Saturday night with about 200 band members playing. Then most of those people (Fran & I excluded) will march in the Pride parade the following day. We would love to come visit and have some fun! It's never too early to start planning, as I always say! :banana:
 

Well, it's day 2 of potty training here. Timothy seems to be ready, and we had a pretty good day. However, it's all reminding me that I'm way too OLD to be doing this! It's a good thing I love the little guy, or I'd just give up and let his kindergarten teacher take care of it! Actually, I'm pretty optimistic that things will go ok. Tomorrow will be the real test. I have to take him with me to bowling, and we'll see how the training goes outside of the house.

Oh man, I can't believe he's old enough for potty training already! GOOD LUCK!

I just have to share - yesterday when Elizabeth dropped Ethan off at Church - he had Chimes, choir, then Faith Friends. He looked at his Momma and said, "Bye Mom and bye Liam, I will be back soon but now I have to go learn about Jesus". I just about melted. What a sweetie.

My mom's always took CoC soup, too. I think the Pioneer Woman's does, too.

Hey, all! It's a chilly, but sunny day here. I'm enjoying the sun, as we have a storm forecast for Monday, and they are saying the clouds will linger until at least Thursday. Ick! I need me my sunlight!

Well, Timothy kind of ignored the potty's at the bowling alley. He was much more interested in the bowling. However, we met Alan at a local McDonald's for lunch, and as soon as we walked in Timmy told me he had to go potty. We got in there, and he DID!!! It was a huge moment for him!!! He definitely got rewarded with a Happy Meal! I'm hoping it was a breakthrough, but I'm not really holding my breath.

Not sure about dinner tonight. Alan wants to go see a movie, so he and I might go out. The kids will be having soup and sandwiches here at home. I've also got to find time to take my Nook Color in to Barnes and Noble. There's something wrong with my cord, and I haven't been able to download the latest software. It's really irking me! Alan couldn't figure it out, either. Hopefully, the tech people will be able to do something for me.
 
Good thing I looked in my freezer. I thought I had a frozen pizza but we must have eaten it already. So on to plan b BLT's

Glynis Mr A was a hard kid to potty train. I thought he was going to be in college before he was out of diapers:rotfl: His motivation was school he wanted to be a big kid and go to school. We told him he couldn't go with diapers. He was closer to 3 when he finally fell for it.:rolleyes1

Well winter finally found us and dumped 5 inches of the white stuff. I think I can handle this since it is mid January.

I'll type the recipe out in a bit, but it's spaghetti with diced or shredded chicken, in a velveeta creamy sauce.

I've never made it before and I'm not sure how I feel about it. :lmao:

Busy weekend planned. We are going to Stephanie & Marty's tomorrow to help get the nursery all set. There is some painting to do and new trim and doors. Once the guys get out of there, we can go in and get the fun stuff all ready. I can't wait!!

Marty got a new smoker for Christmas so I have requested ribs for dinner tomorrow. YUM!!!

They haven't decided on our calendar for next year, so I'm not sure of work schedule, but we will DEFINITELY get together.

Tonight, I made my co-worker's chicken spaghetti recipe. I've had it before, but I've never made it. I wasn't a huge fan. Not because it was horrible, but it just wasn't my thing. :confused3 J and Big C loved it though. Big C said it reminded him of Olive Garden???? :confused3 :laughing:

It's Friday night and the three-day weekend is here. I'm so excited because tomorrow we're going on a date day and we're going shopping at Sam's. Hmmmmm, I wonder if we should go to Sam's first or out to eat first. If we go to Sam's, I'll eat all the samples and be full. :rotfl2:

Morning, everyone! :surfweb: It's 22 degrees here! Woo hoo! I love cold weather and it makes me sleep very well, so it's always a good morning when it's cold outside.

Today is our errands day so we will eat out somewhere. I have no idea where yet.

Ok, we went to Target and did some shopping and ran to the mall so she could buy a bra. (I know, TMI) We then went to lunch at O'Charley's. It was so awkward, you guys. You could literally hear crickets chirping, our conversation was that bad. So when our meal was winding to a close, I asked her if she was in a hurry. She said no, so I took a deep breath and asked if she is was angry with me, had I done something to upset her.

She said, "Oh no," then hangs her head and says, "But I have abandoned you, and I am so sorry."

My jaw almost went :eek:

She then starts crying, talking about things going on at work, how bad things are, etc. I told her since what was going on was clearly not about me, I'm going to tell you what I thought was going on all this time. I then gave her a condensed, and not as blunt, of course, version of what I told you guys.

She was shocked at what I told her. The thought that I had been replaced had never entered her mind. She said exactly what Scott had told me: the only thing she and That Girl have in common is their kids are the same age/mommy things. Feeling better about the whole thing, I asked her if she'd like to continue the conversation at Starbucks. She did, so we left and went there.

We talked some more and I found out quite a few things. Depression runs in her family, which I knew, and I was starting to get concerned that she might need to visit her doctor. She agreed. She's really been isolating herself from everyone and even sleeping a lot more. Not good, you know. I asked her what Kevin (husband, for those who are new to this story) said about all this and how she was feeling, she told me he didn't know as much as I now did. She said she's been keeping a lot of it to herself. I reassured her that I was there for her, DO NOT keep this stuff to herself, and get her butt to the doctor. (As a side note, her monthly stuff is really out of whack and I think that has a lot to do with how she is feeling.)

Anyway, a few lessons learned for Lindsay ;)

-Lay off the Facebook worrying, lol.
-Don't get sucked in (thanks to all of you who reminded me that I've been down this road with her before)
-And like a friend who knows us both told me, I need to make the effort a lot of the time. But I will NOT carry the relationship completely on my shoulders.
-She really does have no one. I need to be the friend I would want to have.
-But again, don't get sucked in, lol.
-I seriously need to talk to people when I think they might be upset with me instead of worrying myself to death about it. Not just with her.
-Typing/writing things out is very cathartic for me. After I typed what was going on to you guys, read it, and left for lunch, I felt a ton better. It motivates me to journal more.
-Don't get sucked in ;)

Lindsay I hope your SIL does go to her doctor. Depression can be why her hormones are out of whack or the result of. In either case I am glad she feels comfortable with you to tell you want is going on. :hug: I am glad you got that out of the way.

We have some errands to run today. I think I am going to try to talk someone into going to Panera for lunch.:teeth:

I definitely agree with this! It amazes me what some people put on their pages. And now of course those same "oversharers" are freaking out because of timeline. I didn't have to make any edits to my stuff before switching to timeline because I don't put anything intensely personal on my facebook. It's just food photos, vacation photos, and other stuff like that. Of course, I had two of John's "oversharer" relatives unfriend me because they said I didn't share enough! You can't please everyone I guess...

Crazy isn't it? I like FB but share very little there. It boggles my mind when an employer needs to give direction concerning what is appropriate information to post :sad2: and worse when the commentary leads to terminations.

I am glad he is getting the hang of it! I know it is exhausting though and get that "old" thing. Rylee uses the potty as a way to stay up, get out of trouble and get treats. After one day I was flopped on the sofa :rotfl: Every day would have me in a coma!

The sun is shining today but it is coolder than blazes out there. Wind chill of -9. Looks nice but sooooo cold.

DInners have been easy. Bacon and eggs the other night for me and you know Buddy turned it all int sandwiches. No breakfast for dinner for him :lmao: last night I made chicken salad sandwiches. I need to cook this evening but it needs to be fast. By the time I will get home from visiting Buddy's Mom it is late.

Cute story about Kady. There is a new Chinese buffet that opened up and she liked it., Buddy is not a fan of Chinese food but will eat it. I stopped in to see Kady last night and she wanted to go out, but I told her Pa probably would not want to go. "Oh I can talk him into it in about 10 seconds!" so I told her to call him. She called him and was telling him who was going, got to "and your wife" when the call dropped. You should have seen her face!!!!!!!!!!!!:lmao: "He hung up on me!!!!!!!!!!!!!!!" She thought it was because she told him I would be joining them and they go out alone a lot! Her expression was hysterical!

He had just started a fire in the fireplace so he had to decline but I imagine he will be inviting her disappointed little self out pretty darn soon!

I think I told you all that I bought David a Shotgun and a pistol for our anniversary well today is his Conceal and Carry class and I set it for him when I bought the guns... But I forgot that I would NEED him since I cant do anything. Not a smart thing on my part, so I am again home alone...

I am feeling much better today, but I do not have the movement that the Dr wanted, so I am not sure what he wants but I have got to start moving it with my finger, and it just plain hurts...

well we are having Baja Fresh for dinner...

It smells really good in here, so I think it will be a hit!

Here's our chicken spaghetti:

And the recipe:

Ingredients:

1 lb. chicken breasts, cooked and cubed (or shredded)
1 lb. Velveeta, cubed
1 can cream of mushroom soup
1 small can sliced mushrooms
1 1/2 - 2 cups warmed chicken stock
1/4 cup cooking sherry
1 lb. spaghetti, cooked according to package directions

Cook spaghetti according to package directions. Drain and return warm spaghetti to pot.

Add cubed Velveeta, mushroom soup and approximately 1 cup of stock. Stir to begin to melt Velveeta. Add mushrooms and cubed (or shredded) chicken. Thin with more stock until spaghetti arrives at desired consistency. Pasta sauce will be thick and will thicken upon standing, so be sure to thin accordingly.

Once all Velveeta is melted and all ingredients are combined, add cooking sherry and serve.

When reheating pasta, you can add more stock to thin sauce.

Oh....My friend uses a recipe for it that has Rotel in it.
 
Becky - that cambodian meal sounds great and certainly more upmarket than the cambodian I eat here.
I don't do FB and know that there is a lot of inadvertent sharing going on. I sometimes wonder if I overshare on the Dis! :confused3 :laughing:

Alison - Next time I'm in SoCal and if you haven't done Pho yet, let's go for lunch at a Vietnamese place!
I'll have to remember to take a picture of the Fish and Chips we have next week to share.

Jen - Thanks for your chicken spaghetti receipe. I used to make something similar years ago. Have you tried adding brie (instead of velveeta) and spring onions to the recipe? And chili flakes? I don't let the brie melt and add it right at the end so that it stays 'whole'.

I was so upset about the lack of mobility that today I was determined to do better, it hurt alot today but when DH got home from his class he was really impressed with the new changes... So I am keeping it up, I have until Monday to make great strides.
