Morning, all! Winter has finally decided to make an appearance here. It is freezing cold, snowing, and windy. Yuck, yuck, yuck! Anyway, I think we'll just plan on hunkering down here and spend the day with hot chocolate and movies!

First of all, thanks so much for your good thoughts for our friends. We were able to talk to Doug and Shawna yesterday (the grandparents), and it is their feeling that Peyton has been ready to go for quite some time, but couldn't do it with his mom around. He held on until she was away, so he could pass peacefully. They are all still horribly sad, but feel that it is a blessing, as well.

Now, on to more happy things. Dinner last night was INCREDIBLE!!! I'll post the recipes for the enchiladas and the sheet cake. You will definitely want to try both recipes!

Dinner tonight will be spaghetti and meat sauce. Not sure on the veggie... I'll have to see what I have hanging around. I'm also going to try a 7-grain bread recipe. We'll see how that goes!

It's gotten to be a bit much posting recipes here and on the food blog, so I'll probably post pics here and an occasional recipe, but most of the recipes over there.

I had a wonderful cooking weekend, but alas, it's back to work tomorrow. Today was my last "off day" until Spring Break. :faint: 2 months! :scared1: Hope everyone had a great Monday!
 

I have a feeling that it will be the next time you are in SoCal that I finally get to try Pho! There are tons of them around my house. We have one of the largest Thai, Cambodian and Vietnamese popluations outside of the native countries in Long Beach. Everytime I turn around I see another Pho place and I just know that even though I constantly mention it, Fran doesn't want to go, so she doesn't.

You're on! DH will have to eat something else and I'm not sure if the Pho places near you are like the ones near me.....there is NOTHING peskyvegetarian on the menu. :lmao:

(And I did get my kitchen back.)

We just got a big brie today at Sam's. I wonder how much a recipe like this would take?

It's Tuesday night and work has been all-consuming this year. For this workaholic, I've just been loving being at work. Sad, I know....but what can I say? :rolleyes:

And if it's Tuesday, it must be baked jacket potatoes with the trimmings for dinner tonight in my joint. ::yes::
I'm hoping that DH's re-discovery of the kitchen will mean a slight change in the routine; we'll see.

Hey, all! :surfweb: I'm meeting Amanda for lunch at Panera today. Scott is supposed to go out to lunch with an old coworker today (AGAIN, the guy calls and cancels all the time, drives him nuts) so no cooking for me. I will call Scott while I'm there and see if he got to go out. If he didn't, I will bring him something for dinner from there. Aren't I a good wife? :littleangel: LOL!

Oh no you di-unt!!!!!!!!!!!!!!!! This is one of my favorite breads in the whole wide world. Was it difficult to make?

Oh, and Jen, I saw Uncle R's request for homemade sausage recipes. Here you go!

Apple Maple Sausage

1 T. vegetable oil, 1 turn of the pan
1 T. butter
1 lb. ground chicken breast
1 small McIntosh apple, peeled and finely chopped
¼ cup maple syrup
1 T. grill seasoning
1 t. poultry seasoning
½ t. ground cinnamon
¼ t. freshly grated nutmeg

1. Preheat a medium skillet over medium high heat with 1 T. butter and 1 T. oil. Mix chicken with apple, syrup, grill seasoning, poultry seasoning, cinnamon, and nutmeg.

2. Score the meat into 4 sections. (You don't have to do this. It really makes a hamburger-sized sausage patty if you do it this way.) Form the meat into 4 large, thin patties and set into hot butter and oil. Cook for 5 minutes on each side.

This is a "30 Minute Meal" recipe that my husband loves. Give it a try. ;)

No! It was SO easy. The only difference was that the crust wasn't as crisp as the one at MG's, but it tasted identical. It was startling how identical it tasted. I even dipped some into some balsamic vinegar and oil last night for "dessert". :lmao:

Uhhhhh, let's see. I stayed up too late watching Real Housewives. :rotfl: So, now I'm tired. ;) Back to work today, but at least it's a "short" week.

Tonight we're grilling hot dogs for dinner...easy cooking after a full weekend of food!

Morning! Our weather has cleared up some, and now it's wicked cold!!! I don't even want to dip my toes out of the house!!!

Dinner last night changed to tacos. We had to go out, late afternoon, so that Katie and Alan could get their eyes checked and order new glasses (Alan has to get bifocals, hee, hee!!!), and when they were done it was dinner time. No one wanted to wait for the pasta and sauce to cook, so we stopped at Del Taco for a family pack. It hit the spot. Timothy devoured 2 all by himself!

I'm thinking that I'll do the cream cheese baked spaghetti pasta for dinner tonight. That sounds warm and wonderful to me!

I haven't uploaded any pics from the weekend yet but it was a big food weekend for us. Let's see.... Friday I made pizza and John and I watched Moneyball (great movie!). Saturday was of course the Patriots game. My Mom made a salad in the afternoon with pecan-coated chicken, goat cheese, apples, and craisins. Then I made snacks for the game: buffalo chicken dip, white queso dip, spinach and artichoke dip, Philadelphia cheese steak spring rolls, a muffaletta, and popcorn. Yesterday I roasted a couple of chickens and made mashed potatoes, green beans, and Pioneer Woman's rosemary rolls to go with. My Mom made the gravy.

WFD: not sure, waiting to hear back from John as to his preference.

We had a really fun weekend. We were at Marty and Stephanie's bright and early Saturday morning. They had cinnamon rolls, and eggs with sausage all ready for breakfast. We then got busy and started painting the nursery. We were fininshed (with the paint) by noon. The guys got all the trim out and replaced. Stephanie and I washed the bedding and by 5:00 the nursery was all but finished. It really turned out great!! I posted pictures on FB if you all want to see. Just let me know!! Marty fixed ribs in his new smoker - O M G they were delicious.

Sunday we had Church then went shopping in GI (about 75 miles away). Not a very productive day and I was glad to finally get home. Just ONE of THOSE days.

Monday I did wash all day - fun way to spend my day off huh?? But at least it is done. Then I spent the day reading my Kindle. I am in the middle of a Trilogy that I am having a hard time putting down. So all in all a great day.

Behind again. :sad2: I did try to post Sunday evening from my cell but it died and I was in no condition to go downstairs to my computer. :rolleyes1

My BFF and I had a girls only football party with articoke dip, shrimp, cheese and crackers, some frozen TGIF's apps and 4 and 1/3 bottles of Moscato and 2 wine coolers. :thumbsup2 That Moscato is WAY to easy to drink.

The wine coolers came from her house by way of her 11yo. :eek: He was upset that he couldn't come to the party, she told him no male parts allowed,;) and at some point in the third quarter he showed up looking for something to drink, they had run out of soda. She yelled out to him that he was only allowed in with alchohol thinking he would just go back home. He left alright, came back in 3 minutes with two wine coolers in a wine glass box. I gave him a bottle of soda and sent him on his way.:rotfl:

Well we had our dinner in the Chinese buffet last night. it was pretty good and welcome because I was visiting Bud's mom so dinner would have been very late.
Tonight I want to cook pork chops. We need to get to see Buddy's Mom first though because I have Rylee and Nola tomorrow. They were here this morning because Brian had errands. My poor little sweetheart Nola has some kind of virus but was feeling better today. Rylee is the next to fall I think, her little nose was running and she started sneezing and coughing. I think that they are going to put their Dr's kids through college!

last night for dinner it just ended up to be me and Hubs but we still had the sloppy joes so that was good - I could tell he wanted to order out but I put the burger in the pan and that was the end of that. HEE HEE sometimes I am evil to my poor Hubs..

tonight is Barber Foods Chicken - Brie & Apple and Parmesean for Hubs, Brie & Apple for me, Kiev for DD and DS doens't like them so Chicken Nuggets. For sides we'll have Lipton Garlic Noodles for the kids, Herb & Butter rice for the grown ups and everyone will have green beans. Then it's off to Hockey!

Yesterday was a good day, I felt good and got ready to go to the Dr. We had a groupon for a local BBQ place and headed there before my appointment.

I had a great meal and then started getting anxious about the Dr.

So he removed my stitches and placed steri strips (SP?) over the site. He was not happy still with the flexibility, to prove it he grabbed my foot and pushed hard and "Showed" me how to be moving it. I was so embarrassed, the tears just flowed, it hurt, he told me he was sorry but that he had to do it and so did I or I would end up back in the surgery center getting the scar tissue broken up.

I am only allowed to take Tylenol now if I need it and I have to push my foot to bend like he wants...

So I have been tired and self pity has set in so I did not get on the boards yesterday.

Today is a little better but I think I need a nap...

Sounds like an intense visit. Almost cruel, but sometimes we need to be shown how much it has to hurt to heal. My brother went through the same thing with surgery on his elbow after a car accident. He was only 9 at the time, and I remember how he cried as my dad would bend and stretch the elbow. After each session, my dad would shut himself in his room and cry, too. Still, it was worth it, as my brother has full range of motion. So, moral of my long story? Stick with it! It will be worth it. Come here and vent and scream!
