The What's For Dinner Thread - November '09(recipe index in OP)

Vickie- I haven't been to either, but I don't think you can go wrong- either way you'll be at Disney. I've only driven past SSR and I can't picture OKW.

Marilyn- How is the eggplant from Trader Joe's? Sorry about the towing charge, but I'm glad it wasn't anything major.

Aimee- I'm sure the 28th will be hear before you know it, and that gives you plenty of time to think of any questions you may have and get prepared. If we were having a salmon dish they would call it "Do I have to eat it all?"

Ellen- It sounds like you all had an amazing time, I'm sorry it had to come to an end. Sounds like the start of a great tradition.

Wendie- Enjoy your visit, did she like the photo christmas gift you made her?

Nancy- I really enjoyed your popover story. It reminds me of when my grandparents used to go to Disney with us. We would go to the caribean beach resort and my grandfather and I would walk down to the food court and get the biggest banana split I've ever seen and share it. Whenever I see a banana split, I think of him.

Not sure what's for dinner. It will involve chicken and lemon, I do know that. I'm just not sure if I want to go the tasty route or the healthy route.
 
Hey y'all,

Sorry I didn't get back yesterday. That recipe kicked my butt. It finally turned out good, but the recipe itself was not right. It was a lot of work, started with making shrimp stock with 12 cloves of garlic. It was a good stock recipe but being a Cooking Light recipe there was not enough roux to make the soup creamy & wasn't very garlicky. I had to thicken it with cornstarch, really season it. I took a pic but I haven't loaded it yet.

Becky, I like that idea of cooking the pastry seperately from the pot pie! I'll have to try that next time. Thanks for posting the popover recipe, I really want to try that.

Sorry to give you the wrong impression . No I've never even met Disney Ron but knew from her signature we lived near each other . It's such a small area and I thought we would probably shop at the same local market ( great meats and deli)

Easy! Here is the recipe for popovers:

Preheat oven to 425 degrees with you popover pan in it (you can use a muffin tin in a pinch).

In a blender, combine the folllowing:

1 cup flour
1 cup milk
2 eggs
1 tbsp. melted butter
1/2 tsp salt

blend until very smooth.

Grease the hot popover pan and pour in the batter. Cook for 35-40 minutes, until browned and popped. Remove from the oven and poke a hole in each popover and lay it on its side to let steam escape. If you want a crunchier inside, you can put them back in the oven for a couple of minutes at this point.

This actually does sound pretty easy. And I actually have all those things. :eek:

Bethany how did the job interview go for hubby or did I miss it?

Not sure. He said the people interviewing were a little hard to read. We should know by the end of next week.

And Bethany - there's a Pancho's in Metairie that has great sopapillos!!

Dinner was Roasted Salmon with Zucchini and Nutty Couscous. Recipe is pretty common sense but never hurts to post it :goodvibes

5 tablespoon EVOO
Salt and pepper
1 cup couscous
Four 3/4 inch thick salmon fillets (about 6 ounces each)
1/4 cup chopped parsley
1.5 pounds zucchini, thinly sliced crosswise
1/4 cup grated parmesan cheese
1/4 cup toasted slivered almonds
4 lemon wedges

*I just bought 1 pound of salmon (skin on) and just cut it into 4 pieces

1. Preheat oven to 450. In small saucepan, bring 1.5 cup water, 1 tablespoon EVOO, and 1/4 teaspoon salt to boil. Stir in couscous, remove from heat, and let stand 5 minutes.

2. Meanwhile, drizzle EVOO into baking sheet/pan. Arrange salmon skin side down and drizzle with 1 tablespoon EVOO. Sprinkle with 1 tablespoon parsley and season with salt and pepper. Roast for 8 minutes for medium-rare.

3. In large skillet, heat remaining 3 tablespoon EVOO over med-high heat. Add zucchini in even layer and season with pepper. Cook, turning occasionally, unitl browned, about 6 minutes. Lower heat to medium and sprinkle in half parmesan, then flip and sprinkle the rest.

4. Fluff couscous with fork and stir in almonds and 3 tablespoon parsley. Serve with salmon, zucchini, and lemon wedges.

*I didn't bother putting zucchini in single layer - just dumped them in the pan and flipped often. They all browned easily.
 
Just got in from the hairdresser. I sure look better than I did a few hours ago! Dinner was American Chop SUey. I had a very restless baby today and he slept on me for over two hours. Apparently he had an allergic reaction so hw was not himself, poor thing.

Nice to see new members posting. I think I read too fast, though. Dinahghost-did I miss a list?

It's pretty good. I usually crisp it up a little before I put it in anything.

Dinner tonight ended up being crab legs and shrimp, didn't have as much eggplant as I thought. I think I will make lasagna later this week.
