The What's For Dinner Thread - November '09(recipe index in OP)

Marilyn, I have never made polenta. Shhhhhhhh, it intimidates me but that sounds simple and yummy!

Becky, tofu looked darn good to me too!!!!

Laura, I am so excited for your family. Talk about a magical holiday!!!:santa:
Safe travels and have a wonderful time.

Nan, I love your Kady and Pa stories. :lmao: She is something else and Buddy is a big mush ball!

Marisa, how is the PT going? Think of you.

Kat, hoping things are not as crazy.

Lori and becky, have great trips!!!

We have a good amount of snow here. I am going to stasy put with the kids. Dinner is going to be what I have in the house. DH may not like my choice but oh well.

WFD- Sausage, yellow pepper, and onion sandwiches.

Good morning all, it's a rainy, yucky day here, but no snow. I wouldn't mind it so much if I didn't need to drive 40 minutes to get an injection that will take all of two minutes. Oh well, I'll be right near Trader Joes so that will make up for it.

Laura- Hands down, my favorite thing to do at Disney is watch my husband and daughter having the best time together, I'm so happy for you that you will get a chance to experience that. Honestly, I don't know how the heck any of you are able to sleep you must be so excited.

Nancy- We were on a farm and the kiddo asked me if they were going to eat the animals and I told her yes. She told me it's sad you have to eat animals, but you have to admit they are pretty delicious. I hope Buddy enjoys his deer watching.

Lori- I hope you enjoyed your birthday.

Gotta run, be back later. Don't know what's for dinner but I have a feeling trader joe is doing the cooking.

I love TJ! Too bad you need to go out in this weather though!

Loving the Kiddo and her delicious animals :lmao:

Yeah Nan.... go tell him that! He'll be avoiding you for the rest of the day!

:rotfl2:

I just did :rotfl2::rotfl2: Let's see if that works. He just changed the filter in the air exchanger in the attic. I have been asking for that for while some time. I also am always hot and he usually has the heat set sky high....so today he decides it is a good day to "circulate" the air. Tha tis fine, I had already turned the fan on. He shuts the heat off! It is snowing out and cold! It is going to be a loooooooong winter!

Morning Y'ALL,

LOL!! Becky said Y'all!!! LOVE THAT!:goodvibes

Laura, I'm all teary over Calli's song!!! So sweet.:lovestruc I am truly & sincerely so happy for your family! oh dear, more tear break...

Okay, I'm better.

Nancy, I guess Kady doesn't think the animals are delicious! I wonder what your big teddy bear is going to do if his grandbaby keeps on him about shooting poor little defenseless deer!

My Dad hunted, but only got a deer once. Angelina was little & both her & I were horrified when we showed up at Daddy & he had a deer hanging from the oak tree!!! In the front yard no less!:scared1: Then of course he tried to get us to eat venison for a year. I have to admit I succumbed to the delicious scent of venison pot roast, but Angelina is still not a venison eater to this day!

Robin, That's a hoot!

Becky, That is the most delicious looking tofu, I've ever seen!

I'm in shopping hell this morning. We asked for lists from the 3 nieces! Why, I don't know. Now trying to get the items on the lists but make it all look equal & it's just not happening.

Last night's dinner ended being roast beef po-boys with my left-over roast. I was tired. We'll have that pork roast tonight.

All of you dealing with this winter weather, please be careful!

I forgot...

Aimee, Yes the cost of the MRI is a worry, considering Blue Cross is not paying up like they should! Right now we still owe $8600. to the doctor for my surgery!!! The dr was out of network, so we knew it would cost 20% more, but so far they have only paid about 10%!! Yeah it's a mess!

Morning friends--
I'm not doing very well keeping up, but I'm trying, and I mean well! You can usually see what I am up to on fb as I can post to that from my phone on the go-go, lol!

I have to admit I am in a bit of a funk with the holidays and missing my mom more then usual, never mind the fact that dad is having Christmas with "HER"!

We have a snow day here today, so all boys who live in our neighborhood are here hanging out, (I was still in bed when Ross yelled up the stairs that he saw Robbie heading up the road....and where there is one, more will follow...yup sure enough within 20 min I have 5 plus mine here:rotfl:) They canceled school before the snow even started, but it started around 9am and it is blizzard conditions now. We are in the 10-14" zone.

Last night we ran a few errands and Kris took me to Kohls and bought me a Keurig!!! I am soo excited:dance3:. It is still in the box, but I will get it set up today!

Let's see if I can get somewhat caught up with everyone....

Becky--That tofu dish looked sooo yummy!! Can you post the recipe with very easy directions on how to prepare the tofu and what I want to buy for it. I enjoy it when I get it out at Asian restaurants, but to do it myself intimidates the heck out of me!!

Laura--I'm am just so excited for all of you with this trip!! Love the song!!

Nancy--I just love Kady/Pa stories!! They make me smile, and remind me of my relationship with my Grampy!

Sheryl--I am so sorry to hear that you are still having problems even with your surgery! I wish I was closer to help!!

Kat--You ok?

Ann--OMGOOOOODNESS....those eyes on your sweet sweet babies..I was so excited to finally see a face to the stories!!!

Lauri--Thank you for the cute Santa card:goodvibes

------------------------
I have lost all train of thought.....sorry.....Just got off the phone (26min) with my dad....he just got back from the Oncologist and they are not going to be able to give him any chemo(pill or port form) as his quality of life will deteriorate to the point he would end up in a nursing home. He is feeling like they have given up on him. I hope not, I hope it is more that he is holding his own right now and he is better without, then with, as he is doing ok. He is getting some strength back from the staph infection he had from the chemo port. Please if you could.....a few prayers and good thoughts etc for my Dad....his voice broke my heart:sad1:..........I have my issues with him, but at the end of the day he is still my Daddy.
------------------------------------

Aimee--When is it that you see your Dr again? I am very worried about you!! There is no need to live in the pain you are having!

Lori--I am glad you didn't have birthday pizza....laundry is bad enough!!:)

Bethany--How is your mood today? Better after a night's sleep?

Marisa--How are you doing girlfriend??

Vickie--How is the head this morning? I suffer from Migraines as well so I totally understand!:headache:

Janice--How much snow did you end up with?

Ellen--I am so happy that Jay made it home in time for Thanksgiving? When does he head back? I'm sorry if this has already been answered.

Well I suppose I should get a few things done around here this snowbound day! :laundy: I am sure the boys will be needing lunch as well, lol!
I will get Christmas cards written out this weekend while we build are annual gingerbread house! They should go out on Monday.

I hope everyone has a great day...sorry if I missed something/one!!

Supper--is pork chops (broiled with a plum glaze) and starch and veggie (which I have not figured out yet, lol)

I am in a foul mood again tonight. For no reason. Just can't shake it. :sad2: Guess I should just go to sleep.

Sweetie, I hope your are feeling better today. I agree with everyone about how happy you are now, but the real benefit to me is finally getting you out of that nasty apartment. I so worried about your health when you were there. The mold and damp just was not good. This move was a GOOD thing.

It is snowing! All of the schools are closed and buddy is home so I have to think of something to get him out of my hair. Already he is sharing his opinion on my Chopped show :headache: and he does not want o hunt in the snow/rain. He is still smarting about Kady's question on Sunday. One of our neighbors got a big buck and so far this is the first that we have heard about in our gossip circle. Lot's of sightings, no venison. Anyway, he had Kady with him and since she was able to squeeze him in for a movie they were chatting about what Pa does when he hunts. She asked him "What has a deer ever done to you?" He had no answer :confused3:rotfl: I will have to explain to her that Pa hunts but I can count on three fingers how many deer he has actually gotten in 40 years, he really likes to just go out and watch them but will never admit that :ssst:

I totally agree with Kady - hands down. I know that it needs to be, but there is no way I could ever look a deer in the eyes and then shoot it, let alone eat it. We are over run with deer here. Lots of deer/car accidents. Matthew included, did over $1500 damage to his new truck. But I still agree with Kady.

Thanks for asking about Jay. Yes we are really enjoying having him home. He leaves friday to head back though. :sad1:

Sheryl~Bummer on the MRI. But you need to feel better and you can't put a price tag on your health. We all need you back to your healthy self.

Kat~ I am holding you so very close my friend.

Laura & Becky ~ I am so excited for you all. Have the BEST trip ever and let the magic fill you all in the special way it can. Enjoy every minute!! Safe travels my friends.

Laurie~Thanks so much for the package for Jay. Yes you can send it as he is headed back on Friday and should be back at camp on Sunday. :sad1: We gave him his Christmas present while he was home. His IPod shot craps so Doug and I got him the new 32 gig Zune. He has had a ball with it and has it all ready to go. He was thrilled. Again thanks so very much for thinking of him.

The snow has ended and now the digging out starts. We woke up this morning to 4 - 6' drifts. This was a BIG one. We have about 14" of snow. The wind (gusts to 50 MPH) started about 3 yesterday afternoon and howled through the night. Doug was able to get home last night but getting in the driveway was a no go, so he had to park out on the road and walk to the house. PTL the electricity stayed on - no problems, this is a very dry snow and that helped a lot.

The schools are closed againg today, which never happens. I am so glad as the last 2 days Ethan has been able to be home with his Daddy. We have so enjoyed having him home and each day is one day closer to when he is home for good.

Prayers to all east of here. Please stay home if you at all can. This is a storm not to be taken lightly. I haven't stuck my nose out since Monday night. I have off till friday and I am thoroughly enjoying being home.

WFDT~Salmon, couscous, asperagus and hot tea

Make it a great day my friends. Stay warm and those in the path of the storm - STAY SAFE!!

Wendie ~ you snuck in on me as I was typing. Sweetie, my thoughts and prayers are with you. This year is hard for you and I do know how you feel. I lost my dear Momma 5 years ago on New Years Day. Mommas are so special and we all miss them at this time of the year. Please know we are here for you and if you need a shoulder mine are always ready.

Prayers for your Daddy are on the way.

Enjoy the boys today - I really miss those days.

Get your Keurig out and start enjoying it - you SO deserve it.

I am so far behind I could cry...I miss the days where I can come and know what is going on with everyone. I am trying to get some stuff organized, decorate and keep the house clean and its just not going the way I want it too.

We had a delayed opening today...What a mess...it probably snowed about 3 inches and then turned to rain...the driveway was a flooded mess. Poor Riley did not like going out in it.

I ordered my cards this morning. That was an ordeal...it took longer than anticipated since this computer is so dang slow!!! And BTW, my normally happy baby was so fussy taking the pic (he feel asleep right after so that was the cause). Argh! I should mail my cards late next week...I am sorry they will be delayed but before Xmas for sure (I hope).

My new laptop arrived but I am intimidated but electronics and hate to open it without Tom here but I will try in the next couple days.

We are all good. I am missing Tom but dont think I will see him before next week...I have to get some shopping done this weekend.

I think dinner will be take out Chinese food. Andrew has a dentist appt at 4:15 and I do not think I will feel like cooking after that...although, I am now wanting tofu and polenta! ;)

Wendy, Prayers for your Dad.

Laura and Becky, What a magical trip you are going to have with Greg being there. I am so excited for all of you...especially Liam and Caili!

Oh crap, I just lost my train of thought...and the baby is fussing...I will try to get back on later...I have been having lots of anxiety so please forgive me if I am all over the place. xo to all!

Becky--That tofu dish looked sooo yummy!! Can you post the recipe with very easy directions on how to prepare the tofu and what I want to buy for it. I enjoy it when I get it out at Asian restaurants, but to do it myself intimidates the heck out of me!!

It was SO easy, really. It took less than 15 minutes. Here is the recipe:

Tofu with Bok Choy and Asian Noodles

For the tofu and its marinade:

1 box firm or extra firm tofu. Drain it, wrap it in towels, weight it down with something and let is sit for about 15 minutes. This will press out some of the water. Then, cut it into cubes. While the tofu is draining, make the marinade:

2 tbsp. soy sauce
2 tbsp. sweet thai chili sauce (available in the Asian section...or online)
1 tsp. roasted sesame oil

Toss all ingredients together, stir in the tofu, and set aside.

Main dish:

1 tbsp. vegetable or peanut oil
2 cloves garlic, minced
3 tbsp. fresh ginger, grated
1/4 cup soy sauce
1/4 cup sweet thai chili sauce
12 ounces asian noodles (you can use any kind you want--ramen, somen, udon...I used udon because that is what I had in the house), cooked according to package directions, drained, rinsed under cool water, and tossed with 1 tbsp. roasted sesame oil
2 heads baby bok choy, sliced thinly (both white and green parts)
1 bunch scallions, halved lengthwise and sliced into 1" pieces (both white and green parts)

1. Heat the vegetable oil in a large pan over high heat.
2. Add the garlic and ginger and stir fry for a minute or two.
3. Add the tofu and its marinade and cook, turning occasionally, until heated through and browned in spots.
4. Add the bok choy and scallions and cook, stirring, two minutes.
5. Add the noodles, the soy sauce, and the chili sauce, and cook, stirring and tossing, until all ingredients are fully heated and coated with the sauce.

This makes 4-6 servings. You can add some sriacha if you like your food spicy.

She asked him "What has a deer ever done to you?" He had no answer :confused3:rotfl:
 Poor Buddy. Kady sure keeps him on his toes.

We were on a farm and the kiddo asked me if they were going to eat the animals and I told her yes. She told me it's sad you have to eat animals, but you have to admit they are pretty delicious.
 That is really cute.

We asked for lists from the 3 nieces! Why, I don't know. Now trying to get the items on the lists but make it all look equal & it's just not happening.

I hope none of them asked for the Zhu Zhu pet thing. I never heard of that until last week, and it sounds like it is impossible to find. It also sounds REALLY annoying. It is times like this that I am so glad my kids do not watch TV.

Ellen -- I'm sorry Jay is leaving again. I'm sure it seemed so quick. At this point, I would just let Ethan stay home from school again tomorrow to get more time with dad.

Wendie -- Prayers for your dad.

Thank you all for the warm wishes for a great vacation! I will take lots of pictures. Speaking of pictures, I will probably wait to send my cards out until after the trip, so I can send you all a card with a picture of the kids in Disney. I hope you don't mind the delay!

I probably won't get back on before we leave, so I wish you all a terrific week, and I'll be thinking of you. Dinner tonight is going to be baked potato chowder.

I am not eating today... though it doesn't seem to make much difference with the pain. Tonight is the kids Christmas program so I have to take enough Vicodin to be happy

Ellen- That storm was a doozy! I am so glad that storm brought so much snow though, that meant one more full day Ethan got with his Daddy :thumbsup2
stay safe!

It is not so bad here, we got about 6 inches and now it is raining. Welby said that she heard there is another on teh way for the weekend, we'll see,

Lauren- please stop worrying about all the little things, you have way too much on your plate right now. Take care of your boys, do what you need to do in the house and stop in when you can. You will have plenty of time to keep up once you are moved into your new home and settled. Is ther eany way we can help with the anxiety?

Wendi- Oh my friend, the Holidays are always very hard, some better and some worse but always there is a void. My sister sends "Hugs to Heaven" and now I do as well. There is something very comforting in that thought for me.I think I understand some of how you feel, no one can fully appreciate anyone else's loss but I am here if I can help.

I will remember your Dad in my prayers

Laura- don't worry about cards, I would love a picture later on. Just knowing that you and your family are in Disney together is the best! Have a great trip and safe travels!

Becky- in case I don't see you on later, have a wonderful trip and stay safe!

Vickie- I hope that you are feeling better now, that headache sounds like it was a bad one!

Kat- how are you doing? Call me if you just want to talk, I am here!

I am working on my cards. I hope that you all can read my writing, it gets worse every year!

Quick fly by......

Wendie - I'm keeping your Dad in my prayers.

Laura & Becky - Have a wonderful and magical vacation!!!!!!!

Sweetheart - STOP, SIT DOWN, AND TAKE A LONG SLOW BREATH!! Please stop worrying about us. We are fine, and will be here whenever you have the time. You have so much more important things to do and to worry about. Please take the time to enjoy your boys and the reason for the season. We are here if your need to talk.
