The What's For Dinner Thread - March '11 (recipe index in OP)

Morning Diners. It's Monday morning and I'm still not 100% but much better than at the weekend. My bucket list never empties...there are multiple buckets and they all runover.

How is everyone doing? Must be getting to summer holiday season now....

I'm already on summer break! I'm not taking any vacations though....:sad2: A friend is coming to visit later this week. She is staying for 6 days. I am working to tweak the itinerary she made.

Dinner was so good! Grilled sirloin, maple/mustard glazed chicken, scalloped potatoes, corn, green salad and garlic bread. Marble cake for dessert

Marisa and Kady, Dan and Erica came by to play cards and have dinner with us. Dan is on light duty at work so he works days, M-F. It is nice to have him for Sunday dinner! Nola called and asked if she could play with Kady so she stayed too. ANd then said "Good cookin' Pa!" :confused3 Really???????
 
Hello all. Had a long day today. Went to an Orioles baseball game then to a birthday dinner for my boss. We had no sooner walked up to the outside of the stadium and it POURED! :scared:

I forgot to grab my umbrella from my van, I rode to the game with someone else, so by the time we got in to the stadium we were all soaked. Luckily they were giving away hats today so I was able to see a little better walking from the gate to the concourse. :rotfl:

It did stop in time for the game and our seats were in a great place, under the upper bleachers and at the top of that section so there was no one behind us and we had a great breeze. The rain held off until the end of the 9th inning but we had left and were on our way to the dinner so we missed the next downpour.
 

So I hurt my leg really badly today. I had had a slightly strained thigh for a few weeks, as I keep injuring it. Today I fell off a ladder when my thigh gave out. Probably headed to the hospital Monday. I can walk but I can't stand up without help, and I am in a whole lot of pain. I don't see me cooking again any time soon.

My guess is a torn muscle.

I took an afternoon nap today; after sleeping most of yesterday. Starting to feel normal again...hopefully another good night's sleep tonight will get rid of this cold. I suspect I'm going to be left with a lingering cough.

WFD - I'm sending DH out to get some rotisserie chicken and chip.

Don't diagnosis yourself. I hope you take your advice and get to the doctor atleast. Let us know how you are doing.

Email customer service and they will probably give you a direct number to call for help. There are three little holes in the needle that need to be cleaned so that the machine can pump the water out. I told the girl that I had lost a lot of coffee pods trying to get the thing to work and she offered me a coupon for a free box from their website. I never asked for anything so this was a nice surprise.
 
BCB- I hope your leg is better this morning. I hope you can get to a doctor today.

We ended up having tacos for dinner last night.

I am at a car service place to get my oil changed. All the magazines in the waiting area are the automotive type. Now, if I was the type to read those, don't you think I could change my own oil and rotate my tires? They need lady magazines in here! You know that's who's doing the waiting!

Kyle's summer break ends today. He is taking two summer classes, which are followed by baseball training and he landed a full time job with the Gulf Restoration Network which begins today!

So, catching up on food. Thursday we had pasta with lemon chicken, tomatoes, and arugula:

Friday we had halibut over a garlic scape and spinach puree. I wanted to grill the fish but my gas ran out right when I went to put the fish on the grill. :mad:

Saturday we had more halibut, this time with a tomato-caper-currant sauce. No pics of the fish but I did photo the side dishes--a pesto fregeola with red bell peppers:

I did not take pictures yesterday, we were all rushing around trying to get dinner ready--Caili had a ballet recital yesterday and going to that threw our timing off cooking wise.

Well I am back at work after a wonderful lazy weekend. The weather was great and the boys were able to get in 54 holes of golf. They had a ball. Saturday night we even took in a Salt Dog Game - Lincoln's AAA Baseball team. I thought about you Kathy - we played Shreevport LA. Sure wish it had been Kyle's team. ;) Matthew's bank was holding a get together at the game so dinner was catered in. We met the CFO, CEO and President. What a great time.

I finished 2 1/2 books - I read to my hearts content. I had a BALL!!!

I will go back and catch up, but I wanted to check in real fast this morning.

I'm no sports expert... but I know we are going to a Rangers (pro baseball) game later this month so I guess pro baseball goes through part of the summer. "summer" is traditionally thought of as June, July, August, since that is when the kids are mostly out for summer break. And because it's hotter than hell. My schedule is CRAZY during the summer, since I work with kids when they are out of school, but lots of people get time off to spend with their kids.

I'm glad you're feeling better - take it easy!

These were really good! I also glazed some sliced pineapple and grilled those, too.

Rum Glazed Shrimp
For the marinade:
24 jumbo shrimp (1 to 1 1/2 pounds), shelled and deveined
2 tablespoons vegetable oil
1 tablespoon fresh lemon or lime juice
1 garlic clove, minced
Salt and freshly ground black pepper

For the glaze:
1/2 cup dark brown sugar
1 stick (8 tablespoons) unsalted butter, cut into 1-inch pieces
1/2 cup dark rum
3 tablespoons Dijon mustard
1 tablespoon white vinegar
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon black pepper
Pinch of salt
1 package sugar cane swizzle sticks (optional)
Vegetable oil, for the grill

In a large mixing bowl, stir together the oil, lemon juice, garlic and salt and pepper to taste. Add the shrimp and toss to coat. Allow to sit for 15 minutes while preparing the glaze.

In a medium saucepan, combine the brown sugar, butter, rum, mustard, vinegar, cinnamon, cloves, pepper and salt. Bring to a boil, then reduce heat to medium. Simmer the mixture, stirring occasionally, until thick and syrupy, 5 to 8 minutes. Taste for seasoning and adjust as needed. Remove from heat and set aside.

Cut the sugar cane crosswise on the diagonal into 5-inch sections, then halve each section lengthwise. You can prepare the recipe several hours in advance up to this step.

Set up your grill for direct grilling. Using a bamboo skewer, make two starter holes in each shrimp. Skewer the shrimp with the sugar cane. Brush the grill grate with oil. Grill the shrimp until cooked through, 2 to 3 minutes per side, generously basting with the glaze. Serve additional glaze alongside.

Yes it is. Baseball actually starts in February with spring training and regular season play in April and goes into the Fall in October.

I have been having an issue myself and mine needs to be de-scaled which should be done, depending on your water, every 3 to 6 months. :thumbsup2 Which I haven't done since I got it a year ago, :sad2: but I do try to use filtered water.

Well, it's a funny thing... I woke up today, and after being in tremendous pain yesterday, and all day long, today I am almost back to where I was before I fell. I originally injured it playing "Star Wars Tag" with my kids at a father - daughter event. That was 3 months ago.

Then as we were moving I kept re-injuring while moving heavy stuff, or slipping on a curb.... whatever. And just about every time I was almost feeling 100%, I would do something to hurt it again. What I really need, I think, is 2 weeks of no heavy lifting, and some heat.

Well, the moving is now 99% done, and the new house has a Jacuzzi bath tub. :) I'm not really a fan of taking long hot baths, but I guess I will. The pharmacist said to ice it down all day yesterday, and then heat for a few days.

It really is amazing the difference between yesterday and today. I even feel like I could jog, if I actually jogged. :rotfl: Yesterday the pain was a 9 out of 10.... today it is zero most of the time, and 3 out of 10 when I make certain movements.

I may even make dinner tonight. :)

Tuesday night here and we had baked potatoes (again). It's about the one thing that DH does really well and can be trusted to wrap the spuds in foil....then place in the oven. Plus he knows how to set the timer on the oven. :rolleyes1
 
Aimee, I have made those shrimp before. They are excellent! One of my summertime shrimp standby recipes. I think I found it in a Cooking Light Summer Grilling magazine a couple of years ago.

They were very good, nice and moist.

WFD: pasta with a clean-out-the-vegetable-drawer sauce of spinach, spring onions, tomatoes, basil, and arugula. John brought home all this whole wheat pasta so we are going to try some this evening. I am not very hopeful, I used to eat ww pasta in college and it kind of tasted like library paste. :laughing:
