The What's For Dinner Thread - March '11 (recipe index in OP)

Nancy As for the ice cream maker all I can say is ON SALE WILLIAM SONOMA Hint Hint Marisa;)

I hope Buddy gets back to work soon. Now is not the time to be out of work.

Gretchen Sorry you are fighting the funk. I think I am in a funk partly because of not sleeping well and stress. If only I had the magic answer about the stress I could fix the sleep part:rotfl2: Needless to say I didn't sleep last night.

Not sure about dinner yet. I suppose it should be something Mexican since it is Cinco de Mayo

Hi everyone. Thanks for the well wishes. I was feeling just under the weather for the last couple of days. Lots of vitamin C, slow days at work and early nights seems to have nipped whatever it was in the bud. I'm still coughing, though :headache:.

Liamsaunt - that cauliflower cheese soups sounds divine. I'm going to see if cauliflowers are back in season yet at the market this weekend and make it. In my household, that 1/3 cup white wine will NOT be optional!

Glynis - I love lilacs; but we're heading into winter here. So I'll be smelling them through you.

EJ4Disney - That cheese biscuit recipe...is that biscuit as in scones or biscuit as in cookies? Pardon the question - but this is one of those things where my universal translator isn't doing it's thing!

Hersey - get better soon.

Vicb - hope your in-laws visit is good.

OKWmom - Whenever I'm in a funk, I stay on the boards; not away. Always seem to get the luv here..

Today, we had to attend DS' school soiree. WFDT - we went to the local Japanese restaurant for dinner and split a chicken teriyaki bento box, some sushi and okonomiyaki between the three of us.

Gretchen- I think we are in the same position. We are having major problems with my inlaws and it's really starting to affect my life. I have been so angry since Easter, and that's not who I am. Everything about my life is so good, except for them and I want to be happy again. It's draining be to the point where I feel like I've worked a full day, my body is beat. I can't even imagine what it's like for my husband. The sad thing is we used to get along so well well with his parents. I'm glad Patrick gave you an easy weekend.

I do understand. Kenny's step-father has always been a difficult man, but now with the dementia setting in, he is becoming almost impossible. He has done some pretty cruddy things the past few months, especially to Kenny's mother who is a wonderful person and deserves so much better. But she is the daughter of an abusive father and married not one but two abusive men. Her first husband was physically abusive and her current husband is verbally abusive (and was even before the dementia). It makes me screaming mad to see how he treats her, but she won't let us help. We have to resort to trickery to get anything done for her and I'm normally a very direct person and that just rubs me the wrong way. When you add that both of Kenny's BILs are still walking with canes and suffering from the effects of their surgeries, it has just felt like being sucked into a vortex.

Ellen – Enjoy your Zumba tonight! I had to skip the gym today, not feeling so great.

Uh oh. Are you ok?

Is anyone making a special menu for cinco de mayo tomorrow? I am doing shrimp seveche, queso fundudo, and guacamole. And maybe a margarita.

The margarita is my favorite part. I'm doing my cinco de mayo dinner tomorrow night - the 6th of the month taco night so I can use the meat to give the dog her heartworm pill. But I might have to have a margarita today. :rotfl:

Oh oh oh it is almost 4 and time for me to head home. The best part of my day.

:rotfl: Mine too. My mood gets better and better the closer it gets to 5:00.

That is very very cool.
While not as old my mum has a flower ( :confused3 Im as clued up on gardening as I am at cookin ) that she got as a cutting from my Na-na and its always the prettiest in the garden.
She has offered me a cuttin lots of times but it would crush me if ( when) I killed it.
I loved my Na-Na very much....

That's really sweet. My mother's Mom, who I loved to pieces used to have a beautiful rose garden. Now I know I have a brown thumb, but in memory of her, I planted roses around the front of my house. Lucky for me, they have improve the technology since I was a little girl and these don't require as much maintenance. Since I needed so many I couldn't get the large ones, but they are about 6 inches high and several have started blooming. It makes me think of Nanny when I look at them.

Good thing you laid down the law when you did. Buddy's nephew went through life believing he was a Gift From Above and so was above any rules that the rest of us low level flyers had to follow. He is 41, unemployed, a father with no prospects and no sense of urgency to change that. After all, knows more than anyone else, even those who would employ him. :sad2:

Thank you, but I'm not willing to say that we are out of the woods just yet. I think he still has his "party manners" when he comes over and I'm sure that is going to change at some point. But we're trying. For the very same reasons that you mention. Patrick still doesn't have any drive at all. He was eligible to get his driver's permit back in August but hasn't even bothered to attempt the test. How many boys aren't anxious to drive?!? Not that I necessarily want him on the road, but if he doesn't have the get-up-and-go to go get a driver's permit, how much hope is there that he will ever get a job?

Dinner tonight is going to include alcohol! Buddy is in construction and has been working without a contract for over a month. Welby's DH is an engineer at the same company. Anyway, the Carpenter's went out this week and are picketing at both gates  The guys are all across the street at the local watering hole which opened early this morning. I just got the house back to myself and now this! :headache: Big meeting on Saturday and I hope that they all come to some solution because I am one unhappy woman right now. To make things more desperate................Buddy is talking about retiring, he said he has had enough of all of the shenanigans! I told him if he retires I am going back to work and he will be :laundy:

That should frighten him into staying at work. :lmao: Seriously though, I hope everything gets worked out.

Nancy As for the ice cream maker all I can say is ON SALE WILLIAM SONOMA Hint Hint Marisa;)

I didn't know they even did sales. I try not to look at all. Too dangerous for my bank account.

EJ4Disney - That cheese biscuit recipe...is that biscuit as in scones or biscuit as in cookies? Pardon the question - but this is one of those things where my universal translator isn't doing it's thing!

I can answer that one. These are biscuits as in scones. Glad you are feeling a bit better.

I have no idea what I'm doing for dinner tonight. Maybe I will find some inspiration at the store today. If not, we may end up with take out. I'm just not really feeling it today.

 wow, that is a load to deal with.

I have no idea why I am even on here, I have a million things to do before MIL and FIL arrive tonight. They haven't been here in three years, there was some type of "misunderstanding" after the last visit and they then cancelled on us the next two times. We have been to see them several times and had no idea they were so bent out of shape about coming to our house until recently. We thought health concerns were the reason they wouldn't travel this far, sigh. I really, really hope things go smoothly. As several of you have pointed out, older folks can be challenging.

WFDT = grilled steaks, baked potatoes and peas with sauteed mushrooms after getting back from the airport. I made lemon bars last week so just got to get them out of the freezer.

Tomorrow night we are having baked chicken medallions with lemon, rice pilaf, sliced cukes and tomatoes with feta and balsamic.

Saturday I have to work and we are all going to see DS in Hairspray so it will be a quick dinner of grilled hot dogs and kielbasa, corn on cob and fruit.

Wish me luck! See you all Monday when it is over!
:thumbsup2

Hey y'all, I sure have missed not having time to chat with all of you! Just so busy trying to help Angelina & keep up here. Plus the weekends are packed too. 1st it was Chris' Church ceremony 2 weekends ago. This past weekend was Alexis' school fair, her class sang Sunday & she was in the drama play on Sat.. This weekend we have Calley's communion & Mother's Day, the next weekend Alexis has her's! Today is Angelina's birthday, it's just been one thing after another. Bob & I will be going to there house to babysit Jude while they attempt to go out to dinner. Dinner will probably be takeout for us, but who cares, we'll have Jude!

I'm sorry I can't sit long enough to read through, but I hope all is well with everyone! :grouphug:

Kathy, what is a skinnygirl margarita? Is that a recipe?

Sheryl, wow you have been busy! Busy in a good way though. I've been loving all the baby pictures on facebook.

Princess in Oz, I am glad you are feeling better.

Gretchen, you sure have a lot going on right now. Hang in there.

Vicb, good luck with the family this weekend. Try not to stress out too much.

Nancy, I bet if you showed Buddy all the things you do while he is at work, he'll be running right back to the job and leaving retirement in the dust!

WFD: the cinco de mayo stuff I posted about yesterday.

I love my lilacs!!! Before Alan and I moved into our home, I dug up a few "suckers" from my parents trees. They've done quite well here!!! I'm so happy about that. The original lilac tree (my parents got a cutting from it) was carried, wrapped in a moist burlap bag from Wales when my several greats grandmother emigrated to America. It has the best smell!!!

That is just awsome, Glynis. WOW!!! I inherited mine when we bought the house. And we have been here almost 20 years, and it was huge then. I have never seen another one, ever, this big. While it is beautiful in full bloom it isn't very fragrant.

To make things more desperate................Buddy is talking about retiring, he said he has had enough of all of the shenanigans! I told him if he retires I am going back to work and he will be :laundy:

 :scared1: Oh no!! Bless your heart.

EJ4Disney - That cheese biscuit recipe...is that biscuit as in scones or biscuit as in cookies? Pardon the question - but this is one of those things where my universal translator isn't doing it's thing!

LOL please call me Ellen. As far as the "biscuits" they are more in the line of scones I guess, defiently not a cookie. They are eaten as a side to a meal not with milk. Does that make sence?

Gretchen ~ Oh that is just the pits. I am so sorry you are having to go through this, especially Kenny. I will be holding you all very close.

Vic ~ I hope your weekend with the Inlaws goes good.

WFDT ~ Brats, potato salad and fresh strawberries.

Make it a great day all!!

/
Happy Cinco de Mayo!!!

Sounds like there's a lot of heavy stuff going on for a lot of you! Here's some :wizard: to help you all lighten the load!

Vicb - good luck with the in-law's. I have a crazy mother in law who gets bent out of shape at the slightest thing. We have made plans for the last 14 Mother's Days to spend the day with her, but she always cancels at the last minute (she's always afraid her kids will cancel on her, so she beats them to the punch). We thought we were ok with visiting this weekend, but she let us know not to come this weekend, as her heart is acting up, and she can't take the small children seeing her like that. Now, I don't believe it for a minute. The woman is a born drama queen, and has to have all the attention. You can be sure that when we don't show up on Sunday, she'll have her feelings hurt and won't speak to us until later in the summer. It happens every year. It's one of the most reliable things about her.

Gretchen - I'm so sorry you are dealing with bad stuff, too. That's no fun for anyone! Take some me time and soak in a bubble bath (with a margarita, if you need to).

Kathy - How are you feeling today?

Sheryl - Wow! What a busy schedule. Enjoy some down time with Jude tonight. I'm loving the pics on facebook!!!

Princess - I'll take pics of my lilacs and post them! My kids think it's really cool that I'm "talking" to someone in Australia who is going into winter. Of course, it snowed here last Saturday, so maybe we're going to stay in winter year round this year.

Laura - Good luck with the interview today! Knock 'em dead!

Becky - I'm hoping for some more cauliflower from Bountiful Baskets this weekend. I'm dying for some actual good cauliflower soup!!! Recipe is printed and ready to go! Come on growers!!!

Dinner tonight will be simple tacos or taco salads. Alan is heading out of town for the weekend, and I have book club tonight. So, easy it is!

Yes, you read that correctly, Alan is heading out of town on Mother's Day weekend. Yes, my nose is a little out of joint, as he usually makes a weekend celebration for me. I'm trying not to say anything, but I know he hasn't done anything with the kids, and I'm a little hurt by it. He says he'll be home by Saturday afternoon, but we'll see. I'm not holding my breath.

Janice – The beet chips sound great!

Nan – I hope things work out on Saturday and they can agree on a contract. I’d go find a second job if Johnny ever retired. Enjoy your drinks tonight!!

PrincessInOz – Glad to hear you are feeling better!

Gretchen – I feel for y’all, especially Kenny’s Mom. Dementia is extremely difficult to deal with and adding that to a person who was abusive already seems impossible. I will pray that you and Kenny can find the strength to deal with this and also will pray that his Mom will allow y’all to help. I’m not sure what’s wrong with me, a bit of a stomach virus and body aches. I think I may be pushing the “dieting/working out/trying to fit in a swimsuit” thing that happens before a vacation.:rolleyes1 I always know what’s coming when you say taco night…doggie pill night!!!!!

Vicb – I’m sure you will do everything to make sure your MIL & FIL have a great visit. Hoping it turns out wonderful for all of you.

Sheryl – I’m sure you and Bob will have a great night with Jude!!! I hope Angelina & Josh have a great night out for her birthday!

Becky – Skinnygirl Margarita is a product from Bethenny Frankel that I love. Here’s a link:

http://www.skinnygirlcocktails.com/home.php

Glynis – I stayed home from work today and am getting some sun, hoping that helps. Thanks for asking! I’m sorry Alan is heading out of town but I’m hoping he’ll be back in plenty of time to spend some quality time with you!!!!

It was a banner day here. First of all, thanks for all the prayers and good wishes. I am happy to report that they worked! :yay: I start Monday. It's a very cool job. It involves a lot of writing (mostly about food!), social media networking and some office administrative work.

That good news was followed by a brilliant pitching performance by Liam. He pitched a complete game (6 innings) -- 9 strikeouts, 0 walks, 1 run. He also had a hit and an RBI. The team won 5-1, their first win, and Liam got the game ball.

Dinner tonight was steak and chicken fajitas at my mom's house. Liam had quesadillas.

Gretchen -- I'm sorry you are dealing with so much right now. Dementia is a cruel disease. It affects the whole family. I hope your MIL gains the strength to seek help.

Robin -- I'm sorry you are dealing with IL issues. I know how difficult and straining that can be.

Kathy -- I hope you are feeling better.

Glynis -- I loved the story about your lilac tree. I'm sure Alan wouldn't forget Mother's Day. You deserve a great day!

She has offered me a cuttin lots of times but it would crush me if ( when) I killed it.

Plants shudder when they hear my name.

Nancy -- I hope everything works out for Buddy. I can't imagine he would want your job!

If only I had the magic answer about the stress I could fix the sleep part

Red wine. ;)

WFDT - we went to the local Japanese restaurant for dinner and split a chicken teriyaki bento box, some sushi and okonomiyaki between the three of us.

YUM! Sounds good.

Vic -- Good luck! I hope the visit goes well.

Sheryl -- Wow, you have been busy! I hope you get some relaxation time tonight with Jude.

Okay, time to head to bed. Good night!

LOL please call me Ellen. As far as the "biscuits" they are more in the line of scones I guess, defiently not a cookie. They are eaten as a side to a meal not with milk. Does that make sence?

Thanks. Yes, scones, not biscuits.

Its going to take me a while to get to know everyone's names....and match them to their handles.

Happy Cinco de Mayo!!!

Princess - I'll take pics of my lilacs and post them! My kids think it's really cool that I'm "talking" to someone in Australia who is going into winter. Of course, it snowed here last Saturday, so maybe we're going to stay in winter year round this year.

:grouphug: I'll spend Mother's Day with you.....you can post pictures of lilacs and I'll post pictures of my sad garden, with the leaves falling.

It gets cold here but it doesn't snow in Melbourne. At least, it hasn't "snowed" for about 5 or 6 years. We might see flakes falling but it doesn't ever settle on the ground. So, by your standards, it's practically summer all year round!

It was a banner day here. First of all, thanks for all the prayers and good wishes. I am happy to report that they worked! :yay: I start Monday. It's a very cool job. It involves a lot of writing (mostly about food!), social media networking and some office administrative work.

How cool is that? Congratulations on the new job. Is it back to work full time or is this a part time gig?

Have a great day everyone.

It's Friday here and we normally have fish and chips for dinner.

Nan – I hope things work out on Saturday and they can agree on a contract. I’d go find a second job if Johnny ever retired. Enjoy your drinks tonight!!

He is working today, the management worked it out that the carpenters will walk the front gate so that Buddy's work can use the back gate. These guys are furious........they do not have any carpenters employed at their workplace and cannot understand why the strikers have not just gone to a site if they want to make a point.

!

:cheer2::cheer2::cheer2: Food???? Really????? Was this job created just for you because it sounds like a perfect fit!!!!!!!!

Congrats to Liam as well! Was ice cream part of the great day??????

SHeryl- I am so jealous! I miss babies and constantly need to get my Nana fix from Nola and Rylee.

DInner last night was grilled steak, salad and corn. Simple but delicious! I planned on grilled chicken but Welby called and asked if the girls could nap here while she did yard work and dug perrenials from her SIL's yard. Her girls are light sleepers so all needed to be quiet here when they finally fell asleep. Then they woke up and :woohoo::dance3:they were wired for sound! She had meat that was thawed and marinated adn way too much for just them so she sent some here. Well, it was a tough decision but Bud and I took one for the team:thumbsup2

DInner this evening is out with friends. We are joining Buddy's boss and his wife and I cannot wait!

Laura:cheer2::cheer2:Congrats on the job!!! you see all the posts on the DIS is helping:lmao: This is a job right up your alley. Congrats to Liam also:cheer2::cheer2:

How is it when you have a sleepless night the day after is worse than the morning after. I feel like I was hit by a truck. It is going to be a coffee day since I can't call in today.

Dinner last night was brats and baked potato nachos. I thought the nachos were good but Mr A just thought they were ok. I post the recipe later if anyone is interested.

I forget now what I had planned for dinner:rotfl: I'll be back later when the coffee kicks in.

Well I woke up in a bad mood, but after reading Sheryl's post overflowing with happiness over Jude and Laura's fantastic news, how can you not smile and turn it into a good day.

Laura- That is so awsome! You must be thrilled and the kiddos must be even more proud of you than you already are! I know your life is going to get even more crazy than it already it, but I'm sure also much easier without that weight on your shoulders. I'm also glad you didn't need to wait long to find out.

Janice- At least you had something planned for dinner, I don't remember the last day I did.

Nancy- Have a fun night out! I'd pick the steak too, we are chickened out over here.

Vickie- My grandmother gave me a geranium plant a couple of years ago and I barely kept it alive. The plant finaly gave up and died a few months after she did and I was so upset. I understand you not wanting the cuttings, I have killed spider plants. I have to lavender plants in the house that I'm giving as gifts to my daughter's drama club teachers this afternoon, I can't wait until they are safely away from me, I've had to care for them since Tuesday! It's all very stressfull!!

Glynis- I hope things work out for Mother's day. I love having Mother's Day first, then I know how much effort I need to put into Father's Day.

Thanks all for the good thought on the outlaws. I really didn't want to say anything here because I was afraid the floodgates would open, besides this is my "happy place." It's really a very sad situation, I'd be happy with being done with them or trying to repair what's left of our relationship- it's this wishy washy in the middle bull that's getting to me. My main concern is my husband will also loose his sisters over this, he has a much younger sister just finishing up college who will be living with them.

Anyway, it's a beautiful day, Laura has a job, and Sheryl is over the moon with that baby so as Ellen says I'm going to MAKE it a good day.

Roast chicken, potatoes and salad for dinner. Have a great day all!

Laura – Congrats on the job! It sounds like a great fit!! :cheer2: for Liam, I’ll bet this is the first of many outstanding performances for him!!!

Nan – Enjoy your night out tonight!

Robin – I couldn’t agree more with your reasoning on why it’s good that Mother’s day comes first! I’ll continue to pray that your in-law situation resolves itself without your DH losing his sisters.

WFD - I'm feeling better so I've got a million places to go today. We're going out for seafood!

Good morning! The cinco de mayo food was good last night. Here is the shrimp seveche with guacamole in the background:

5693141448_3776bda6bf.jpg

We also had queso fundudo, which we wrapped in tortillas with the guacamole. It is onions, roasted poblano peppers, montery jack cheese, and chicken chorizo sausage. I don't usually like chorizo but I like this kind, it is al fresco brand and it has mango in it. It is spicy and sweet but not overwhelmingly smoky like some chorizo can be:

WFD: John's going to the North End fish market and getting trout. We are going to grill it on a cedar plank along with some new potatoes, asparagus and cherry tomatoes. I'm making a lemon browned butter sauce for the fish.

Have a good day, everyone!

Thanks, everyone for the congratulations. When I was describing the job to my dad, he couldn't believe how well it fit with my interests. It's part-time, 20 hours/week to start, but that could increase. I'll be able to pick my own hours, so it really is perfect!

It's Friday here and we normally have fish and chips for dinner.

Yum! I haven't had that in a while. I guess I will have to add it to my list.

How is it when you have a sleepless night the day after is worse than the morning after.

I agree. I hope the coffee helps!

I love having Mother's Day first, then I know how much effort I need to put into Father's Day.
:thumbsup2 Love it! I hope you and your husband can work things out with your ILs.

Here is the shrimp seveche with guacamole in the background:

Sigh...that is the only shrimp dish that I miss.

Liam has a birthday party and Caili and I are getting together with friends, so dinner will be whatever is served there. We have a busy weekend between baseball and ballet, so I probably won't get back here for a few days. I'll try to get on here after work on Monday. Have a great Mother's Day!!

Saturday I have to work and we are all going to see DS in Hairspray so it will be a quick dinner of grilled hot dogs and kielbasa, corn on cob and fruit.

That sounds like fun. I hope he does well and I sincerely wish you good luck this weekend with your inlaws.

Hey y'all, I sure have missed not having time to chat with all of you! Just so busy trying to help Angelina & keep up here.

No worries, Sheryl. We're glad to see you when you can stop by and I'm glad you're enjoying Jude. Time passes so quickly when they're small, as I'm sure you already know.

It's one of the most reliable things about her.

:rotfl: At least you're still able to keep your sense of humor about the situation with her. I think that is well over half of the battle. And I hope Alan does make it back on Saturday and that he has a fabulous Mother's Day planned for you. :flower3:

It was a banner day here. First of all, thanks for all the prayers and good wishes. I am happy to report that they worked! :yay: I start Monday. It's a very cool job. It involves a lot of writing (mostly about food!), social media networking and some office administrative work.

:cool1::cool1: Laura, that is great news!!! I'm so very happy for you and I hope you love working there! I know it is going to be a huge adjustment, but I just know that you will be fine.

And congrats to Liam on his outstanding performance yesterday. What a great job!

It gets cold here but it doesn't snow in Melbourne. At least, it hasn't "snowed" for about 5 or 6 years. We might see flakes falling but it doesn't ever settle on the ground. So, by your standards, it's practically summer all year round!

It doesn't really snow where I live here either. We get a few flakes every 4 years or so and it usually doesn't stick. If it does, we don't normally get more than an inch or two but that is enough to shut the entire town down. We don't have the equipment or the know-how to deal with driving in the stuff so we close the schools and most offices. Which I just know cracks up my friends here from the northern climates where snow is a fact of life. However, we get summers that are hot and so humid that it feels hotter than you-know-where.

He is working today, the management worked it out that the carpenters will walk the front gate so that Buddy's work can use the back gate. These guys are furious........they do not have any carpenters employed at their workplace and cannot understand why the strikers have not just gone to a site if they want to make a point.

I don't blame them, I would be furious too! I'm glad that Buddy and his guys can get to work another way and don't have to deal with the carpenters head on. I think that is much safer for the carpenters that way. ;)

Have fun at dinner tonight.

How is it when you have a sleepless night the day after is worse than the morning after. I feel like I was hit by a truck. It is going to be a coffee day since I can't call in today.

I don't know, but that is getting worse as I get older. If I stay up really late now, the next morning I wake feeling like I have a hangover and I didn't have a single drink.

Glynis- I hope things work out for Mother's day. I love having Mother's Day first, then I know how much effort I need to put into Father's Day.

I suspected you were brilliant. Now I know for sure. ;) Now that's a good plan.

WFD - I'm feeling better so I've got a million places to go today. We're going out for seafood!

I'm so glad you are feeling better today. Hope dinner is great!

Tonight is taco night, a/k/a Tory's heartworm pill night.
