So, I went to the endodontist. Apparently, when they did the root canal, they bothered my sinus, as the tooth root goes directly into that sinus. :confused3 I'm on antibiotics to take care of that inflamation/infection and hopefully this will clear it up. I may have to go to an ENT to follow up, but here's the good news:

NO NEW ROOT CANAL!!! My tooth is okay and I get to keep it!

Merle ~ Wow, you are one busy woman. Don't rush around too much that you get sick. Take care!! Does your DM go with you to see your neices and nephews?

With my neices, no. She works weekends so she can't and she doesn't like the swim meets. Also most times I go to visit them, I stay for the weekend and the same thing, she works. Usually we bring them to us for a weekend here or there when they are available and in August they will come and stay for a week once summer swim is done.

As for me nephews they live out of state and she will go visit them for a week one or twice a year. I usually don't go because most times she doesn't tell me until right before she goes. I think it's because she doesn't want to share her time with them. :rotfl:

The ones that play football are my godsons, they are my best friends three boys. :thumbsup2
 
Here is my White Chicken Chili recipe - Changed a little - :rotfl2:

Crockpot White Chicken Chili

6 skinless chicken thighs
1 large onion
2 cloves garlic, chopped
1 ¾ chicken broth
1 tsp. Cumin
1 tsp.dried oregano
½ tsp red pepper sauce
½ tsp. Salt
2 cans (15 -16 oz) great northern beans, drained and rinsed
1 can (11 oz) shoepeg corn, drained
3 Tbls. Lime juice
2 Tbls. Chopped cilantro

In crockpot mix onion, garlic, broth, cumin, oregano, salt and pepper sauce. Add chicken. Cook on low for 5hrs.

Remove chicken and shred, return to pot. Stir in beans, corn, lime juice and cilantro. Cover and cook on low another hour.

Ok that is the original recipe but this is what I do - :lmao:;):lmao:

Chicken – I usually have a rotisserie chicken if not 3 or 4 breasts – we like some meat in our soup.
Onion - same
Garlic - same
Broth – same
Cumin, oregano, salt – same
I used pepper flakes – I didn’t have pepper sauce and I have left this out also.
I like Cannoli beans (they are a bit larger and withstand the long cooking) so I use 2 large cans of these.
I have also added a can of black beans – we love them
I don’t put the corn in – your choice
No lime juice – don’t see the need
No cilantro – I don’t like it

I had some left over Alfreado sauce so I added it – probably 1 cup or a little more. This is what I think made it oh so good. I always add it each time I make it now.

I put it all together in the morning on low and by 5 when Doug gets home the house smells wonderful and dinner is ready.

I baked my bread in my bread machine set to be ready at 5 also.

Well the rain that has been forcasted for a week is here. We really do need it. The farmers have been running the combines 24/7 trying to get the corn and beans out and in the bins. They said on the radio this morning that the harvest is only about 45% finished. Wet corn is in but the dry corn is still standing. So even tho we needed the rain of course the farmers are not liking it one bit.

WFDT ~ We are having dinner with Marty & Stephanie at our favorite place for a burger and a beer. OH Life is good!!!!!!!!

Italian Sausage Minestrone


Ingredients

1 pound bulk Italian sausage
2 large carrots, chopped
2 celery ribs, chopped
1 medium onion, chopped
6 garlic cloves, minced
3 tablespoons olive oil
7 cups reduced-sodium chicken broth
2 cans (15 ounces each) cannellini or white kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
2 bay leaves
1 tablespoon Italian seasoning
1 tablespoon tomato paste

ADDITIONAL INGREDIENTS:

1 cup ditalini or other small pasta
Shredded or shaved Parmesan cheese


Directions

•In a Dutch oven, cook sausage over medium heat until no longer pink;
drain.

•In the same pan, saute the carrots, celery, onion and garlic in tender. Stir in the broth, beans, tomatoes, bay leaves, Italian seasoning, tomato paste, pasta if you're adding it, and sausage. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Top with parmesan.




I did add the pasta and topped the soup with parmesan. This one is good enough to make you roll your eyes back in your head. :cloud9:

I drove right past that big chemical fire from earlier this week (I think someone mentioned it a page or two back?) and it's still smoking. And it SMELLS. Crazy to see it in person!

Yeah, supposedly they are monitoring air quality but I wouldn't want to live near it. Sadly, it's right near tons of neighborhoods, apt complexes, and restaurants/shopping.
 
These were very good - this is the Williams Sonoma recipe, with the added step of letting the dough rest for 24 hours (serious willpower needed here, people!)

Chocolate Chip Cookies
2 2/3 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 large eggs
2 tsp vanilla extract
2 cups semisweet chocolate chunks or chips
1 cup chopped walnuts, toasted (I used pecans)

Sift the flour, baking powder, baking soda, and salt into a medium bowl.

In a large bowl, using an electric mixer on high speed, cream the butter until fluffy and pale yellow. Add the granulated sugar and brown sugar and continue beating until the mixture smooth and sugar is mostly dissolved. Add the eggs and vanilla and beat on low speed until blended, occasionally stopping the mixer and scraping down the sides of the bowl with a silicone spatula as needed.

Add the flour mixture to the butter mixture and mix on low speed or stir with a wooden spoon just until blended. Add the chocolate chunks and walnuts, if using, mixing or stirring until blended. Press plastic wrap onto the dough, and refrigerate 24 hours.

Once 24 hours have passed, preheat the oven to 350. Using a cookie scoop, or dampened hands, shape the dough into 1-inch balls, and place on ungreased cookie sheets, about 2 inches apart. Bake the cookies until golden brown around the edges, about 12 minutes (or 8-9 minutes if using a smaller scoop). Let the cookies cool briefly on the pans on wire racks before transferring them to the racks to cool completely.

Here is a photo of last night's dinner. I have never worked with duck eggs before. They cooked a lot quicker than chicken eggs do, so the yolks were a little more done that I usually prefer, but the flavor was good. After taking the picture I chopped everything up like a cobb salad.

Becky - that duck's egg looks great. I only use it for salted eggs but have never really cooked it without the preserving. Must take a leaf out of your book and do this next time I get some. :thumbsup2


Kathy is doing ok and should be back in a couple of days. She is trying to handle a some stuff.

PIO- Hope your husband is feeling better soon. I've been using cane sugar in my pad thai, to be honest I have a hard time adding sugar to dinner, so I use very little. My pad thai is good, but not great- would you mind posting your recipe.

My Pad Thai recipe? I haven't cooked it in a while...so I don't have food porn...but here it is. And I'm pretty sure that one of the others cooked a version and posted the recipe rather recently as well...might be on that excellent front page that Kat updates.

Pad Thai


  • Raw prawn or shrimp, 200 g - peeled and deveined
  • Dried rice noodles,250 g - the thinner noodles, not the thicker ones. Soaked in warm water until soft and then drained.
  • Pork (or chicken), 150 g - sliced
  • Garlic chives, 1/2 cup - chopped
  • Bean shoots, a decent handful or two - washed and cleaned
  • Eggs, 2 - beaten
  • Red Chilli, 2 teaspoons - chopped
  • Garlic, 2 - 3 cloves - minced
  • Fish sauce, 2 tablespoons
  • Lime juice, 2 tablespoons
  • Soft brown sugar, 2 teaspoons
  • Fresh Coriander sprigs
  • Roasted unsalted peanuts, 1/4 cup - chopped (optional)
  • Crisp Fried Onion or shallots - I get this from my chinese grocer. But this is shallots fried on a low/medium heat until golden brown and caramelised.
  • Oil, 2 tablespoons


Heat the oil in a wok or large frying pan.


When hot, add the garlic, chilli and pork. Stir constantly for about 2 - 3 minutes.


Add the shrimp and cook for another 1 - 2 minutes.


Add the garlic chives, about half the bean shoots and the drained noodles. Stir to mix in and then cover and allow to cook for another minute.


Add the fish sauce, lime juice, sugar and eggs to the wok. Toss well to ensure that the egg and the sauce is mixed thoroughly with the noodles and other ingredients.


Transfer to a serving plate. Sprinkle the remaining bean shoots, coriander and peanuts; then top with the crisp fried onion.






I haven't cooked this in a while because DH is vegetarian and you really need the pork (or chicken) in the pad thai. And we've pretty much eliminated peanuts from our house....one of my nephews is severely allergic to it. However, now that I've typed it out and thought about it....might be a nice recipe to pull out again for DS to try.

Dinner was bow ties with meat sauce and meatballs. I also had salad and garlic bread. Pumpkin ice cream for dessert. Welby and the girls came to dinner. She supply's us with her fresh eggs and will not let us buy food for them or contribute to their cost but she will agree to join us for dinner. Brian is on nights until winter so she is alone with my girls.

Nola os adjusting to preschool and no longer cries when Welby leaves her. She asked me if I cry at school :upsidedow She was not able to sleep this weekend for some reason so she was really out of sorts. I picked her up from under the bed and she told me in her pathetic little sad voice that she was "having a hard time" :sad1: so a little Nana/Nola snuggling was in order. She then insisted her "Pa the Grouch" visit her ;)

DInner is up in teh air, I am working and want to finish my Halloween outdoor decorations.

Really ticked this year. :mad: We have a tree in the front yard and the branches over the front walk had finally grown over enough to "shade" the front door and part of the walk from the streetlight glare. Makes it really spooky with the fog from the fog machine. They came last week and trimmed the trees in the neighborhood. :headache:

When we first moved in it was like that and they did the same thing about 5 years ago. Before they did that the branches were really low, I could touch them without reaching too far, and the fog would really hover there as long as there wasn't a breeze.

Hi Everyone! I am on here later than usual for a Friday. I ended up having to work a couple hours today, then Caili had a birthday party to attend. It was a spa party...complete with manicures, pedicures and facials. I was jealous. Caili did decline the facial and makeup. She said she would only have to take it off right away anyway, and she only wears makeup for ballet recitals and skating competitions.

Dinner was Indian buttered chicken with rice and spinach. I just used a jarred sauce, but it was pretty good.

Alison -- That is quite the meat fest at your house! I wouldn't have room in my freezer for everything. If you looked in my freezer, you would be hard-pressed to find anything other than bread in there.

Kat -- :hug: I am thinking of you.

I hope you have the car back now and it wasn't too expensive a fix. I hate car repairs. I think some of your nice weather is heading our way. Our house is pretty cold, but they are promising 80 degrees on Sunday. I refuse to turn on the heat if it is going to be 80 in two days.

Aww...that made me sad. It is tough adjusting to being away from home. I hope she is happier about school soon. Luckily, it seems things change pretty quickly when kids are little. My boss's little boy came home from Kindergarten two weeks ago saying he hated recess because no one would play with him. Now, everything is fine.

Ok, sorry about that! The past few days I have written a long post only to have the DIS get "timed out" and I lose everything. Argh!!! We are switching from DSL to cable modem next week, so I hope that solves these problems. My internet has lost it's mind!!!

Ok, onto what I tried to say yesterday :)

We got hand controls* put on Scott's car on Thursday. Yesterday we took a mini-road trip so I could get used to it. Not just the car, the hand controls are a completely different style than the ones I have on my car. I was a little intimidated by them at first but holy crow, I love them! Driving is sooooo much fun now, lol! It's hard to explain, but these hand controls reduce arm and hand fatigue, and they certainly do! This morning we are meeting Scott's dad for breakfast and after coming back home to get a few things done, we are hitting the open road again!

Scott has a 5-day weekend and doesn't go back to work until Tuesday. Long story, but he had a few days left to take off before the end of the year (not counting days like Christmas Eve and such) and since he has Columbus Day off anyway, he took yesterday and today off. That said, we went grocery shopping yesterday so no errands to run today. I will probably cook, though, since we ate out Thursday and Friday. Not sure what I will make, I may zip over to the grocery store while I am out driving, lol.
