The What's for Dinner Thread- June 2012 (recipe index in OP)

Good morning ladies,

Alison ~ slow but sure it will all be done eventually. Sounds like you have some fun time ahead of you this month. Have fun but please take care of yourself. I worry about you.
Thanks for the reminder of the lasagna meal. I can't wait for this one. Oh do I have a good one for all of you!!

Take care all!!!

Birthday party was a blast last night. Doug and I gave Ethan $50 - I got 50 $1 bills and crumpled them up in a box. The look on his face when he opened that box and saw all those bills was just priceless. Lilly and Liam were so glad to see each other. They are so darn cute, but oh my the older they get the more we see the trouble they will be. What one doesn't think of the other one does. :rotfl2:
Ethan and I have a tradition of doing snakes on the 4th. They are going out to Linda's (Jay's Mom) for the 4th and we are going to Stephanie's, so I stopped at the stands and got snakes, poppers (for Lilly & Liam) parachutes, smoke bombs and some firecrackers. I just couldn't let the 4th go and not still do our snakes. The littles came with us and sat and watched. They loved it, so I guess it is now a tradition to do with me. LOVE it!!

WFDT ~ grilled bacon cheeseburgers, sweet potato fries and fruit salad.

Make it a great day all!!

What was for dinner last night? Filet mignon on the grill with homemade garlic herb butter and sauteed yellow squash with onions and mushrooms...

AND, PiO, it [the filet] was from your neck of the woods...

Happy 4th of July Eve day - wow that was really reaching huh?? :rotfl2:

Kimmar ~ Your dinner sounds amazing. I love summer meals on the grill.
I am totally intrigued with your breadless garlic bread. Please share!!

PIO ~ Jump in anytime my friend. I know you have been busy, but jeepers I missed you!

All of you on the East coast please take care!!

As soon as we get off of work we are heading to Kearney to Marty & Stephanie's. Matthew & Katelin are coming in, as are some friends - Luke & Kimberly from Kansas. There is a BIG celebration tonight at the Event Center and fireworks at 10:00. We go every year and they are beautiful. Not Disney but pretty darn close. We never miss them.
They boys have T times at 9 tomorrow morning and then a fun filled day with fireworks tomorrow night.

WFDT ~ Meatball sandwiches and all sort of sides.

Make it a great day and a wonderful 4th of July.

Every year we grow zucchini in our garden, but this year we decided to grow yellow squash. I picked it when it was bright yellow and was about 2 - 2-1/2" diameter and is still fairly 'seedless'. I sliced it about 1/2" thick, but diagonally to resemble slices of french bread. I drizzled some extra-light olive oil over it, added a little s&p, garlic powder , and a liberal amount of grated parmesan cheese. Mix and 'marinate' for about 15 minutes. Grill on a hot grill [I use the top grill, not the one closer to the fire] about 5 minutes on each side. After flipping on the grill, sprinkle a little bit more cheese on top. Serve on a platter.

Have a great 4th and enjoy the fireworks.

last night was Cabbage salad, and green beans, David had some chicken

Tonight is Collards, tomatoes, fresh basil, and garlic

Kimmar - Your squash sounds delicious!! If you ever have a picture, please post. Hope the Aussie Fillet Mignon was tender. I'm guessing it was beef and not kangaroo. ;)

Ellen - The end of the vacay is always bittersweet. I'd love to have that feeling of freedom go on forever; but I missed home and my bed.

Alison - I'm happy to report that we did NOT eat at McD at all on this vacay.

Brandi - Keep those vegie dishes coming. I showed DH that kale recipe and he was keen for us to try it. I'm checking the kale in my garden today and might look to prepare a serve this weekend.

Amber - Welcome to the thread.

Happy 4th July weekend everyone. I hope you have a great time enjoying the fireworks and spending time with loved ones.

WFDT? I made a pot of leek, potato and carrot soup last night. This is a soup that you keep so thick that the spoon can practically stand up in it. We will be having it for dinner tonight.

...bbq spare ribs and chicken breast on the grill. Plus, I made broccoli au gratin with the head of broccoli my DH picked from the garden...

Kim, it sounds like your garden is really flourishing. And things grow really quickly, do you start them inside your house and then transplant them when it starts to get warmer?

Your dinner sounds awesome!

We are having caprese salad, and turkey a la king. Just finishing my salad and then going to prepare the turkey dish.

....my DH has a 'portable' greenhouse, that he started all his plants from seed [in empty Chobani yogurt containers]. About 10 days ago, they all suddenly seemed to take off. One of his tomato plants is over 6 feet tall!
