WFDT - Cauliflower with Non Cheese sauce, and some brussel sprouts, David gets a chicken breast!
I picked up some deli roast beef and will make a brown gravy to heat it up in. Make some mashed potatoes on the side with a veg and calling it dinner.
I've never done it with the roast beef before but have with deli turkey, so we'll see how this works out.

Sorry I have been SO busy that I didn't have time to even write my paycheck this week. Next week everything should calm down.

Today marks the 1/2 way point of Holy Week. But it is the busiest part. Next week will be so quiet. Thank goodness. I haven't even had the time to check in here and I don't like that. You all are my rock's!! We have services tonight, the Seder Supper tomorrow, Good Friday services and then Easter Sunday. I have Monday off - I am going to sit and read all day.
I have a favor to ask of you. I need to take a vegetable for Easter Dinner - along with 2 pies, an angelfood cake, and rolls. I am totally stuck for the vegetable - I am so tired of corn pudding or green bean casserole. Do any of you have any good suggestions or something you always have? I am in a total rut - I even looked on Pinterest and really didn't find anything that wasn't different. I would really appreciate your help. Thanks!!

Well, the deli roast beef didn't turn out too bad. If I decide to make it again, I think I will have the deli slice it a little thicker than regular thin sliced (like for a sandwich....Trial & error, I guess. I've also done the same with deli turkey. Made up some turkey gravy, tossed the deli meat in it and served it on toast..

Well, the deli roast beef didn't turn out too bad. If I decide to make it again, I think I will have the deli slice it a little thicker than regular thin sliced (like for a sandwich) Was kind of hard to pick up with the fork. Tasted fine though. I just made up a couple packs of brown gravy, heated the roast beef in it and served it with mashed potatoes. I do think, that if I had made sandwiches out of the thin sliced roast beef, it would have been pretty good. (probably with an au jus and not brown gravy though) But I think with heating it up in the gravy, I should have heated it up for only a couple minutes. Might have been a bit better. Not that it was tough, but I just think a quick dip in the gravy it would have been better.
....once in a while, I'll do this too. However, I try to get as rare a cut of meat as possible, add the gravy, and sprinkle shredded mozzarella cheese on top and THEN heat it up (enough to melt the cheese).....
....I've done the roast beef thing and made them on loaves of toasted garlic bread! OMG, sooooo good!
