The What's for Dinner Thread- June 2012 (recipe index in OP)

WFDT - Cauliflower with Non Cheese sauce, and some brussel sprouts, David gets a chicken breast!
 
I've been busy too. Tonight is band, so we drive through dinner.

Tomorrow night I'm making a small standing rib roast with roasted onion potatoes. I think we might be sampling our first zucchini from our garden as our vegetable!
 
So DH piked out of making bolognaise sauce. He convinced DS to have leftover baked potato....and bribed him with bacon. I think I've done my job as a parent. Bacon is always best. :lmao:
 
I picked up some deli roast beef and will make a brown gravy to heat it up in. Make some mashed potatoes on the side with a veg and calling it dinner.

I've never done it with the roast beef before but have with deli turkey, so we'll see how this works out.

That's a great idea. How did it work out?

Sorry I have been SO busy that I didn't have time to even write my paycheck this week. Next week everything should calm down.

Brandi ~ Your detox sounds very interesting. Why did you decide to do it? To lose weight or what? I am really interested to know.

Today marks the 1/2 way point of Holy Week. But it is the busiest part. Next week will be so quiet. Thank goodness. I haven't even had the time to check in here and I don't like that. You all are my rock's!! We have services tonight, the Seder Supper tomorrow, Good Friday services and then Easter Sunday. I have Monday off - I am going to sit and read all day. :p

I have a favor to ask of you. I need to take a vegetable for Easter Dinner - along with 2 pies, an angelfood cake, and rolls. I am totally stuck for the vegetable - I am so tired of corn pudding or green bean casserole. Do any of you have any good suggestions or something you always have? I am in a total rut - I even looked on Pinterest and really didn't find anything that wasn't different. I would really appreciate your help. Thanks!!

Well, the deli roast beef didn't turn out too bad. If I decide to make it again, I think I will have the deli slice it a little thicker than regular thin sliced (like for a sandwich) Was kind of hard to pick up with the fork. Tasted fine though. I just made up a couple packs of brown gravy, heated the roast beef in it and served it with mashed potatoes. I do think, that if I had made sandwiches out of the thin sliced roast beef, it would have been pretty good. (probably with an au just and not brown gravy though) But I think with heating it up in the gravy, I should have heated it up for only a couple minutes. Might have been a bit better. Not that it was tough, but I just think a quick dip in the gravy it would have been better. Trial & error, I guess. I've also done the same with deli turkey. Made up some turkey gravy, tossed the deli meat in it and served it on toast.

....once in a while, I'll do this too. However, I try to get as rare a cut of meat as possible, add the gravy, and sprinkle shredded mozzarella cheese on top and THEN heat it up (enough to melt the cheese).....

....I've done the roast beef thing and made them on loaves of toasted garlic bread! OMG, sooooo good!
 
Ellen - I do a snowpeas with cherry tomato vegie side dish for Christmas. You may remember the picture....






If snow peas are pricey, you could substitute with green beans. I stir fry the beans/snow peas in a pan with a little oil and garlic, throw in some cherry tomatoes and then add sweet chilli sauce.

If you remember while the rest of the country was having awful weather, So Cal skipped Winter. We planted our tomatoes and zucchini the first weekend in February. The Zucchini is doing amazing, there are seven more squash growing right now and that's after I picked the two today.

I like these Zucchini boats. Just slice in half, par boil, hollow them out, and sauté the insides with some onion, add a little parmesan, fill them and bake 20 mins before serving.

The bolded are all things I do when making sandwiches. We actually have them a lot but that's because we buy Prime Ribs when they are on sale, keep them in the freezer. After eating it as Prime Rib, we slice it up and have them as open face beef sandwiches and French Dips. Yummy!

dinner last night was zucchini, onion, garlic, celery, carrots, and crushed tomatoes, with basil, thyme, and oregano

Today is cold, cloudy and windy out. I really need to see the sun. I am so sick of this dreary weather. I know my attitude would be better.

We made a last minute decision last night and played hooky from choir and church. I know we are such rebels but it is what it is. I have been on the hunt for a joke book for Ethan's Easter basket, so into Kearney we went. Called and the kids met us for dinner. Lilly was so excited to see us - made the whole trip worth it. After dinner Doug and I went shopping and I found exactly what I wanted. Actually it's even better than what I was wanting. Don't ya just love it when that happens? :p

WFDT ~ Tonight is our Seder Supper so I really don't know what all we will be having. There will be Lamb, and fruit I do know. I'll let you know tomorrow.

Tonight we have an appt for a college tour for our oldest. So it'll be a quick dinner tonight. Homemade burgers on the grill with a cheesy potato casserole.

It's Good Friday today and I really must remember not to have any meat today. We're "meeting" friends for breakfast so as long as there as I remember to not order ham or bacon, I'll be fine.

I got some seafood mix from the supermarket last night so I'll be planning a seafood pasta for lunch.

WFDT? We'll be having fish and chips.
