The What's for Dinner Thread- June 2012 (recipe index in OP)

Today we had a family celebration and we went to Dim Sum for lunch. I'm in a food coma right now.

WFDT? Nothing!!!! I don't think any of us will be hungry!

Alison - I love the clearing out of old stuff. Seems like you're well on the way to moving into the new place.

Brandi - I'm going pretty stir crazy at not having that lens to shoot with!!!

Dim Sum.... That sounds so good to me right now. I swear I crave soy sauce at times, like nothing will help but a good dose of it. Dim sum is the perfect vehicle for me.

Yesterday, I cooked some dried great Northern beans with a couple of Ham bones, and today will finish off the soup! Have no idea when we will eat it, but I just wanted it.
 
Our big push now is to eat stuff out of the pantry and freezer so we don't have to take it with us. we will be eating eclectic meals from here on out!

I di this too. I have to make a point of using up packaged food because of I don't it kind of moves to the back and ends up expiring. We finally finished up the frozen foods except a few hams that I still have no idea exactly what kind they are, so I am now in the process of stocking the freezer back up for winter.

Well, I have a spoon roast ready to cook, but since we did not go see Sharon yesterday (she was exhausted) I may put it in the freezer and we can stop at Buddy's favorite grinder shop after we visit this afternoon. We'll see.

It's Monday morning and I think we're having hamburgers for dinner tonight. AT least, DS and I will be....if I remember to take the patties out of the freezer. It'll be a standard day today. Hopefully, I'll get some time Dis-sing and writing my next update of the TR.
 

We're going to Knott's Scary Farm tonight. Unfortunately Fran is back feeling under the weather, so I doubt she will have a very good time. There is a Pink's hot dog place just outside the park, so we'll have dinner there.

Since today is Monday we will be doing Meatless Monday, I believe we are having Black Bean burgers tonight with a baked Sweet potato.

Tuesday night and it's baked potato over here for dinner. One thing that we've added to the sides is a spicy lentil and tomato sauce. We had a similar thing when we were with DH's cousins in Colorado and thought it went well with the humble spud.

It's back to the full swing of work routine here. *sigh*
 
Yum!!!! I love baked potatoes! We had a roasted chicken dinner with mashed potatoes and gravy and honey glazed carrots.

The sauce sounds really nice, so what do you put on your spud? To make it dinner? not just a plain one right?

I am now looking for cold weather dishes to prepare for meatless....

Ideas?

David will not eat a cooked carrot... it is a texture thing for him. raw he can do, but cooked, he will push them around on his plate.
 
We wrap the potato in foil and bake in a 180 C oven for about 1 - 1.5 hours.

We serve it with coleslaw, cheese and avocado/guacamole. You can put sour cream on as well. We will also open a tin of baked beans to add on top of it.

Lately, I've been making a lentil thing....1 tin lentil, 1 tin diced tomato. Dice an onion and fry it. Add the tomato and lentil. Mix in 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon paprika, 1 teaspoon turmeric and chilli powder to taste. Simmer for about 10 - 15 minutes. Season with salt and pepper.

last night was great nothern bean soup that I cooked with a ham hock and bits of ham, with a side salad.

I also made another cake...

1.5 c ap flour
.5 c sugar
.5 c splenda
12 oz pumpkin puree
1.75 tsp baking powder
1 T pumpkin pie spice

bake 33 minutes in 9x9 pan at 350

it was the perfect low calorie dessert for us...

It used to be... Now we don't have white potatoes in the house...

We throw sweet potatoes in at the same time. It works just as well with the sweet potato. Is that on your food list? Just cook it for a little less time.

yes we eat a lot of Sweet potatoes... They are on the allowed list. I bought a bushel of them at the farmer's market 2 weeks ago, and they are doing wonderfully in the basement garage...

Alison - how is Fran feeling? Better I hope.
PIO- I was thinking of you when I planned dinner for tonight. WE are having loaded baked potatoes and I am making a spiced meat, like taco meat to put on top, along with sour cream, steamed broccoli, butter cheese and bacon. Marisa Kady and Erica are joining us (Kady loved loaded potatoes so she is thrilled!) Welby is bringing the girls and she is thawing steak as we speak. I guess she is not impressed and thinks that Buddy will sulk (He would have :lmao:)

Also- I love lentils but never thought of using them for a topping. I have made a red lentil soup but Kady likes a "Madras" lentil meal that I pick up from Costco. It comes in a pouch that you just heat up. She prefers that one to anything I make :confused3
It is going to be a pretty lousy night so I hope the kids still have fun. Buddy is worried he won't be able to be here, he has been waiting for a damp, and today we are getting one. He never misses Halloween with the kids so he is worried.

I have been trying to think of Halloween treats and might make a brownie graveyard cake, pick up some cider donuts, and maybe buy some pumpkin cookies. Of course we have the chocolate bars to hand out, and some mini bars for the house.
