The chicken sounds wonderful! You use a whole fryer?

We tend to stick with breast filets, but a whole chicken taste better...
 
Brandi- if I am roasting chicken, I tend to use a whole chicken or pieces with bone and skin. I like to roast on high heat at first and then drop it back when I roast a whole bird. Chicken legs I roast at 375.

We do alot of beer can chicken and rotisserie chicken... I have not roasted a whole bird in forever... Maybe it is time. I have done a lot of Turkey...

It has been a while for me as well. I use orange soda when I make beer can chicken, but it has been a long time. My grill kicked the bucket a few months ago and I have nto shopped for a new one. Marisa smoked a large chicken the other day and said it was delicious.
 

One of the best things is that David is doing all of this with me.

I almost feel out of my chair last night when he told me that we could do meatless two night a week!

Can you believe that this die hard meat and potatoes guy is going to go meatless two night a week!

Fran would freak if I tried meatless one night a week. I have a couple meatless dishes and I've tried them as a main and she won't have it.

We do chickens whole mostly because they go on sale for $.79 or $.99 lb and they are cheasp. I have so much turkey and chicken in my freezer that needs to be used in casseroles, chicken a la king or with dumplings.

Hmm we haven't had chicken a la king in forever. That over some English muffins sounds really good!

David was very off putting at first, but when I said things like "Cheese enchilada, with refried beans"

Egg drop soup and fried rice veggie stir fry

Pancakes and eggs

Tomato soup and grilled cheese

These were easy ways to get him started, then I started making them lighter, and healthier

It has been a long road but he is doing much much better.

Last night we had, Grilled Chicken, Summer Squash, and baked Sweet Potatoes...

Tonight we are having pork and Asian cabbage slaw...
 
Last night we had pork chops, buttered noodles, mashed turnip and carrots and a pork gravy. YUM!

i did have an issue though. I have double ovens and I stored some baking dishes, a bag of chips and a bag of cheesy poofs in the bottom one. Somehow I also started the lower oven and :scared1: What a mess!

Food sounds wonderful.... The clean up does not sound wonderful!
 
I almost did that at my parents house. I had no idea she was hiding chips in the oven! :lmao:

Tonight we are having turkey, stuffing, mashed potatoes, sweet potato casserole and zucchini. Fran and I nade the turkey yesterday but I wasn't hone to monitor it. I'm afraid it is overcooked and dry.

I'm planning pasta for dinner tonight. Will make a seafood in butter sauce to go with it.

Allison- gravy solves every problem!

WE had homemade chicken soup and Italian bread. Buddy added ham sandwiches.

I am not sure about today because we are planning t go see Buddy's cousin after Mass if she is up to company. If we go we will pick something up.

The pasta and sauce turned out pretty well. I didn't take any pictures because my camera lens is with the repairer. I hope to get it back within the next couple of weeks. :hyper:

Alison - Hope you are in a good kind of 'busy'; rather than the yucky busy mode.

/Everyone loved the turkey. I'm sure the gravy helped! Fran pretty much made everything I was so impressed, but she slept for the entire day today. I'm about to crawl into bed but she only came out to eat dinner and otherwise has been in bed. I think it kicked her a$$ to make that dinner. It was very good and everyone loved it.

Tonight I made us a steak, some packaged rice that we are trying to eat up, it belonged to our friend Arline who died last year so we finally ate it and I made us spinach sautéed, which was good.

Our big push now is to eat stuff out of the pantry and freezer so we don't have to take it with us. we will be eating eclectic meals from here on out!
 
Today we had a family celebration and we went to Dim Sum for lunch. I'm in a food coma right now.

WFDT? Nothing!!!! I don't think any of us will be hungry!

Alison - I love the clearing out of old stuff. Seems like you're well on the way to moving into the new place.

Brandi - I'm going pretty stir crazy at not having that lens to shoot with!!!

I go thru times, were I have too much stuff and I make us eat it... Then the next time I look we have too much stuff... I swear I make a list and only buy what is on the list, and it is for our meals that week.

I have no idea how I end up with stuff....

UGHH, I would hate to move right now, but I would love to move home RIGHT now.. I know you know what I mean!
