Microwave Chocolate Cake in a Cup



I've used that viral on-line recipe for the chocolate cake in a mug, cooked in the microwave. And pretty much followed the instructions (almost) to the letter.


My starting ingredients:







  • 2 parts Self Raising Flour
  • 1 part Sugar
  • 1 part cocoa
  • 1 part Butter
  • 1 part Millk
  • 1 egg
  • vanilla essence
  • 1 part chocolate chip



I mixed the dry ingredients in a mug.






And added the milk, vanilla extract and egg.






After I mixed it with the dry ingredients, I added the melted butter. Naturally, the butter was zapped in the microwave.






After more mixing, it was time to add the chocolate chip. As I didn't have the "normal" chocolate chips in my pantry, I used these multi-coloured chocolate drops instead.






More stirring....






....before the cup mix got zapped for 3 minutes.

I couldn't find my measuring spoons; so I just used a cutlery sized spoon instead. Guess I was a little bit over-exuberant with the measurements.

I ended up with something that completely overflowed the cup.






I let the cake sit for a couple minutes and then removed it from the cup. This cake served the 3 of us.






I wasn't entirely happy with the recipe; so I had another go. This time, I was less exuberant with my spoon quantities.

I still followed the same basic recipe; but I did tweak the order of mixing.






I decided to cream the butter and sugar together, and then add the egg and vanilla....as you would for a conventional cake.







I then added the flour and cocoa powder and mixed it in; with the milk. I did add a little bit more milk (just an extra bit) so that the mix was a little bit more 'wet' than for a cake baked in the oven.






The mix came up to about 1/3 - 1/2 of the cup size. I zapped the mix for 3 minutes. With less mix, the cake didn't explode out of the cup too much.








After a couple of minutes, I ran a knife around the inside edge of the cup and upended the cake.







With that little bit of extra milk in it, the cake was quite moist.






I didn't have any chocolate chip left for the second run-through; and next time, I would add an additional 1-part sugar to substitute. It was still a lovely cake; just not quite sweet enough for my tastes.

We used to laugh and cry together. Now nothing. :sad:
I am so sorry Brandi :( I am back in school and my life is one disorganized mess. I almost never cook and when I do it is grilled something and salad ;)

I miss everyone too! I', going to pretend I have been keeping up and jump back in if that is okay with everyone!

Perfect for me. I just miss everyone.... Glad you are doing good, and back in school, and back here...
 
I miss all the folks on this thread too, but evidently most of them have moved on. I am going to be getting back into cooking now that we are back from the cruise and we need to get back to eating sensibly. I have lots of vacation weight to lose! :rotfl:
 
I am in Virginia this week at a conference, which means that I tend to eat out way too much.

Dinner last night was from Abuelos.

I got the Romaine Lettuce for wrapping. It was good.

That looks yummy! And you're being healthy by using the lettuce. The best I did yesterday was to order the egg white delight McMuffin for breakfast! :lmao:
 
This morning I had an egg white omelet with onion, spinach, tomatoes, and green peppers.

I also worked out before breakfast... I am so close to the 30 pound mark... I can almost see it....
 
I know dinner will include a mushroom soup, Wienerschnitzel and a Souffle, but there will be two other courses including beef and seafood. Looking forward to it!

Dinner tonight was at my mother's. Rice and curries and stir fry.

I miss you too! I am embarrassed to admit that I put on almost all of the weight I lost last year so I am back to trying to eat better. It is hard because I am in school and time management is not my strength. So let's try to eat well together :thumbsup2

The other day I had my little Princesses when W hurt her back. I got Micky D's for them and when they did not finish their burgers, I ate the burger and tossed the roll ;) FIgured I made great strides!

Dinner tonight was pumpkin soup. Served it with Pane de Casa and French Baguette breads.

Winter is truly here!
 
I always chuckle when i see you cold weather comfort meals when i am craving grilled summer classics! I truly hope that Spring is here, there is snow in some parts of teh country right now :scared1:

I'm over salads right now. :rotfl:
