Oh Brandi- I am so very sorry :grouphug:

WE had a good dinner last night.

My version of apricot chicken:

brown BL/SL chicken thighs that have been seasoned with salt and pepper in a hot pan and then transfer to a baking dish

combine equal part french dressing and apricot jam, ( I used 1/2 a large bottle of dressing and 1 16 ox jar of jam) 1 package onion soup mix and a good bit of chopped garlic in a sauce pan. Bring to a boil and then simmer until it resemble a tight sauce.

Pour over the chicken and bake at 350 for about 35 minutes.

It was really good over teh seasoned couscous.

my mother used to make that but she called it red russian chicken and used russian dressing in place of french.
 
Last night I made us burgers on mini Kaiser Rolls. I was craving a nice thick and juicy burger, but any restaurant that you get one at, the thing would be a third of a pound or more. Mine was less than a quarter of a pound and really tasty! Hit the spot!

We had potato chips and a pickle (veggie) with it! :lmao:

Tonight? :confused3 I have the other half of the package of ground beef left, however, this will be the third night in a row we eat beef. They say you should only have it once or twice a week. I either need to freeze it or cook it because the next two nights will be dinner out, Tuesday in the car on the way to band and Wednesday meeting up with the car club.
 

...WFDT? filet mignon that was on sale at Shop-Rite! I'm making it with home-made stuffed potato skins.....

Hey, everyone! Tonight we are having soft tacos with refried beans. Easy for me! Sorry, again, for being so scarce. I've got a lot on my plate lately. I hope you all are well!

I'd say whatever makes you happy is what's best!

Last night dinner ended up being Lobster and shrimp ravioli with a garlic butter sauce. Frozen meal.
 
WFD - italian breaded chicken with a side of spaghetti and a salad (I will have a banana instead)
 
Ugh... Dinner tonight was super yummy homemade lasagna that took FOREVER to make. The UGH is because DS10 has decided he doesn't like Italian food anymore!!!!! Grrrr.... He had one bite, two huge bowls of Cesar Salad, and two pop tarts. He is sick today, so hopefully this dislike of Italian food is just because of that... :(

I think he's just sick. He's never been picky at all... His two favorite foods are escargots and sushi (the raw stuff). I'd go crazy with a picky kid!!! :crazy:

update on Insanity - middle of the 8th week, and I am down 9.5 pounds
Rear end is getting tighter, wind is much better, cardio is a lot better, and I can actually do a couple of pushups!

Only 1 more week to go... Then I take a two week break, (vacation) and then hip hop abs...

Tonight it's homemade vegetable soup with meatballs. Easy peasy and comfort food :)
 
Tonight is grilled pork chops and grills steak. Marisa is coming over and will not touch red meat. I have potatoes to bake and steamed veggies with a salad.

Last night dinner was tossed. I had taken chicken out to thaw but when I opened it it had gone by so left over tuna salad for Buddy and I had scrambled eggs wit mushrooms and cauliflower.

Brandi- Holy Smokes Girl! You are doing great!

Tracey- How is your boy today? If a normally hungry kid won't eat...usually means he is sick.

Allison- how is Fran doing? Is her wound all healed yet?

Lindsay- I cannot talk about anyone, I am a cluster! School is wonderful but I am in the weeds with everything else so we don't even get a real hot meal every day anymore. Not much to post when all you cook is sandwiches ;)

Kim- I got lost between your planning trip thread and this one. Did you book your trip and are you staying at AKL? It is honestly my favorite resort on Disney property.
