The What's for Dinner Thread- June 2012 (recipe index in OP)

Thanks for asking Nan. She is not healed yet. Each time we go see the doctor he is really pleased with her progress. There are still four holes in her leg, but they are getting much smaller. I'm hoping by the end of the month she'll be done with all this. Hopefully in early November she can start her arthritis drugs.

Last night we had sloppy joes. No idea about tonight.
 
DS has football until 6, then a sax lesson for an hour, then we all get our hair cut....
I'm thinking dinner out sounds about right! ::yes::

I have no idea. No one seems hungry in the house and it's already 7 pm at night.
DS ate something earlier and isn't hungry.
DH is putting on something simple for himself.
Me? I don't know what I want...so I'm going to wait and see. Might do some mac and cheese later.

Tonight is grilled pork chops and grills steak. Marisa is coming over and will not touch red meat. I have potatoes to bake and steamed veggies with a salad.

Last night dinner was tossed. I had taken chicken out to thaw but when I opened it it had gone by so left over tuna salad for Buddy and I had scrambled eggs wit mushrooms and cauliflower.

Brandi- Holy Smokes Girl! You are doing great!

Tracey- How is your boy today? If a normally hungry kid won't eat...usually means he is sick.

Allison- how is Fran doing? Is her wound all healed yet?

Lindsay- I cannot talk about anyone, I am a cluster! School is wonderful but I am in the weeds with everything else so we don't even get a real hot meal every day anymore. Not much to post when all you cook is sandwiches ;)

Kim- I got lost between your planning trip thread and this one. Did you book your trip and are you staying at AKL? It is honestly my favorite resort on Disney property.

WE had grilled chicken adn grilled green and yellow squash last night with a green salad. And a glass of wine.

Tonight we are going to Buddy's bosses and will take it from there. We have Kady and they have their grandchildren, so we will either go to Bruburgers or order Chinese in. Kady is hoping to go out, they have a cranked up van that Jeannie used for her day care kids and kady loves it.

Tomorrow will probably be pizza. I started decorating for Halloween today and have not gotten outside. Buddy and Dan are going to see what the dickens is going on with my dishwasher and then Marisa and I are going to bottle wine. I washed 60 bottles yesterday and it was not fun. I have Chamblais and a Tropical ZInfandel ready. It really is good but more like a wine cooler. I have Pinotage almost ready. We picked up a Shiraz, a Pinot Noir and an Italian Volpolicella to start this week.
 
Well, I'm hopelessly behind on everything! Changes with our band are making my life more difficult. Closing the music store is a lot of work, and all this on top of taking care of Fran, myself and the kitties. I think dinner for the next couple weeks will be courtesy Sam's, Costco, and take out!

Lunch was a deliciously oozy toasted cheese sandwich. Crunchy toast with soft melted cheese.

English Scones


My starting ingredients:


  • Self Raising Flour, 3 cups - sifted
  • Butter, 100 g - cut into cubes
  • Milk, 1 - 1 1/4 cup
  • Cream, 2 tablespoons
  • Pinch of Salt



Preheat oven to 200 C.



Add the cubed butter to the sifted flour.

Pinch the butter into the flour until the mixture resembles breadcrumbs.

Make a well in the middle and add the cream and about 1 cup milk.

Mix it all together to form a sticky dough. Add the additional milk if required. I normally add enough liquid for the dough to just stick to the sides of the bowl.
Do not overwork the dough or the scones will be a little rubbery and tough.


Turn the dough out onto a floured surface, adding more dough on top.

Pat out to form a long oblong of about 1 - 2 inches thick and use a cookie cutter to cut out rounds.

Place the scones on to a baking tray or pan.

Continue until all the dough is shaped into scones. Lightly dust the top of the scones with flour and cook in a hot oven (200 C) for 20 - 25 minutes.

The scones should be nicely brown on top.

Serve warm with jam and cream; and a nice hot cup of English Breakfast tea.

The wine making sounds so cool...

So I made Lemon vodka, and it turned out so smooth and wonderful, I made a small batch and it took three months but I am ready to make a big batch.

Last night dinner was pizza, and tonight it a pork satay, we have been trying to cut back on calories these last two weeks, since we leave for vacation this coming Saturday.

I know we will be bad while we are away, but hoping to be conscious about our food and drinks.
