Three days... Really three days since a post....

What has happened to our thread?

We used to chat everyday......

I miss you guys...

I'm here. Just in a cooking funk! With Alan back in school full time, my meals are a lot more boring. The kids want tacos, spaghetti and sandwiches all the time.

Things here are ok. Timmy ran a fever yesterday, but it seems better now.

Truth be known, I'm a little burnt out from work and need to take some time to recharge. I raised the prospect of taking a week off today.....don't know if I'll be able to wrangle it yet. Hoping to sort this out by early next week.

Glad to hear the family is doing well, and I understand about the cooking, David and I have been very simple the last few weeks also..

I will be taking a vacation in a couple of weeks and will be gone for two weeks, and I am so looking forward to it... So I understand about being burnt out....

I'm making Quesadilla Casserole AGAIN...
I think we eat it twice a week!

So what's the recipe? I'm guessing it's likely similar to what we call Mexican Lasagne...layered tortillas, cheese and other stuff to make a casserole?

It really was great that we lost nothing and that they were so responsive!

I get my meats every 6months, delivered to my house, I just got my delivery 3 weeks ago... So almost 5 months worth of food was in there!

That's so awesome that you salvaged the food AND got a new freezer! It was a year ago next weekend (1st weekend in October) because I discovered it on my way out the door to Gay Days weekend at DL. We finally ate all the food from that cook off about a month ago. The problem is, I don't think I've cooked ONE of my Turkeys from last Thanksgiving's sales, so I've got at least 4-5 in the freezer. It's just been too darn hot to cook a large roast!

I better get on that! Now the one bone Prime Ribs, I've cooked just about all if those.

I can COMPLETELY relate to the burnt out thing! We are going away this weekend (which I still don't believe until we get there) to a Car Club event. We joined the Great Autos of Yesteryear car club and they are hosting an event to view a privately held car collection Saturday afternoon. We will drive up to Solvang area (for those who know So Cal geography) on Friday. We'll stay two nights and the club has a BBQ scheduled for Saturday night. I'm just looking forward to getting away even if just a couple nights.

It's also in wine country, so maybe we could hit a winery before going home.

So funny you asked! I have one in the oven now!!!! This thread has made me realize how often I cook it!

The only changes I make are:
A full size can of corn (15 oz., undrained)
2 cans of green chilies
And I use 2 cans of Rotel tomato sauce instead of plain

I serve it with fruit, tortilla chips, salsa & sour cream.
Sometimes a green salad, but not tonight. :goodvibes
 
I had an issue very similar to Alison and Fran's last year maybe...

I came home and got food from the freezer, it was not working... I unplugged, plugged back to try and reset it.... Nope didn't work, called the people we bought from and they said to try and leave it for 15 minutes unplugged.

During this time David and I noticed how hot the sides and top of the freezer were. It is a 17 cubic foot stand up freezer, that was currently packed to the gills with food and was thawing quickly!

I had no idea how long it had been out, I had been in it Sunday, but did not remember if it was working then, but the food was solid, now not so much.

well, by this time the 15 minutes was up and no it did not work... The light came on but no cooling was happening there.

I called around to a couple of places and found some dry ice, bought 15 pounds and shoved it in the freezer. This morning everything was frozen.

The company we bought it from called us at 6:30 this morning, they were bringing out a loaner freezer that they had on hand, and they would install and move over all the food, but they had to do it right then.

So 7AM they show up, (I am already on my train) and they move all the food, but it is bigger than the one we had, a newer model and now it was 21 cubic feet, no big deal just move some stuff out of the way.

After they get everything moved, they give a piece of paper to David to sign showing receipt of the freezer and that they are giving us the freezer.... as a replacement, not even trying to fix ours, just give us this one. and it had less than 1 hour of use...

I was happy! a brand new freezer and no food spoilage, and they did all the work.

How cool is that.

So was this the thing that you alluded to on the AKL thread? I hope so. I wouldn't want you to have gone through two traumatic events this week!

That's almost our Mexican Lasagne, instead of the tomato sauce I use salsa, no beans, frozen corn instead of canned and I add fresh onion and green pepper to the meat. I also add in a layer of cottage cheese between tortilla layers, also we use corn tortillas instead of flour, but essentially it's a pretty simlar dish. We like it too, but I can't eat things more than once a week and I have so many things in my aresenal that we don't eat stuff more often than once a month and somethings we go more than several months before we repeat them.

I guess I'm lucky that without kids we have a lot more choices since we aren't as picky.
 
Yours sounds really good, too!!!

I'd love to blame the kids, but thankfully they will eat almost anything.... Snails, sushi, spicy- doesn't matter to them. We eat it so often because it's so easy to make. I brown meat and onions on the weekends and freeze it in one pound blocks, then I can make this, chili, tacos, or spaghetti really fast... It's just one of my go-to-because-it-is-fast meals. :)

I make a Mexican Lasagna that is similar to the casseroles mentioned. I use ground chicken in it for a different texture and taste. Of course Buddy hates it............he said it does not look like food :rolleyes:

I have been cooking a little. It took over a week to get over that cold and I had no energy left to make anything decent after school all day.

Tonight the girls (Nola and Rylee and Kady) are taking me to Red Robin for my birthday and then off to the high school to vote on allowing a new apartment building into town. I hope NO!!!!!!!!!!!!!!!! Tomorrow we are going to the BIG E so it is fair food for dinner. And Saturday we are going out for dinner to celebrate my birthday. I am a lucky lady, no cooking for the next few days so I hope to have time to decorate for Halloween.

It is just too hot to cook like that in the summer, I save a lot of that for the winter. Heats up the house in the winter is good, in the summer it is bad...
